OLD BAY TILAPIA, SWEET POTATOES AND VEGGIES

Old Bay Tilapia, Sweet Potatoes and Veggies image

I'm not a huge fan of the classic sweet potato casserole, so I concocted this dish. The reds, oranges, and yellows are perfect for fall entertaining! Then I decided that the flavors would complement tilapia, orange roughy, or any white fish really well. It was a hit as both a vegetable side and as a full meal.

Time 1h

Yield 4-6 serving(s)

Number Of Ingredients 10

2 tablespoons olive oil
3 large sweet potatoes
1 red pepper
1 yellow pepper
1 medium red onion
1 medium tomatoes
2 teaspoons Old Bay Seasoning (more if you want it spicier!)
1/2 teaspoon black pepper (again, you can add more)
1 tablespoon parsley
18 ounces tilapia fillets (about 3 filets) or 18 ounces other white fish (about 3 filets)

Steps:

  • Preheat oven to 350°F.
  • Wash and scrub the sweet potatoes (or remove the skin, but I like to keep it). Cut them into cubes about 3/4 inch in size. Place in a 13x9 inch pan.
  • Chop the onion and peppers into 1 inch by 1/4 inch slices. (I think that the dish look better when they are this size. It's really not important how large they are.) Add to the pan.
  • Dice tomato. Add to pan with other veggies.
  • Add olive oil, old bay seasoning, pepper, and parsley to taste. Stir well to coat veggies.
  • Bake in oven for 25 minutes.
  • Add tilapia filets to bottom of pan by scooping veggies aside and covering the fish with some of the veggies. Bake additional 20 minutes until fish flakes.

Yield Makes 4 servings

Number Of Ingredients 6

2 ounces thinly sliced pancetta (Italian bacon), chopped
1 cup fresh breadcrumbs (from French or sourdough bread with crust, ground in processor)
1 tablespoon plus 1 1/2 teaspoons chopped fresh sage
2 pounds medium yams (red-skinned sweet potatoes), pierced all over with fork
3 tablespoons butter, divided
4 5-to 6-ounce tilapia fillets or eight 2-to 3-ounce fillets

Steps:

  • Sautépancetta in large nonstick skillet over medium heat until crisp. Transfer to small bowl. Add breadcrumbs and 1 tablespoon chopped sage to drippings in skillet; stir over medium-high heat until breadcrumbs are almost crisp, 5 minutes. Transfer to bowl with pancetta. Cool (reserve skillet).
  • Place yams on plate and microwave on high until very soft, 5 to 8 minutes per side, depending on size of yam. Transfer yams to work surface. Cut yams in half lengthwise; scoop out pulp and place in medium glass bowl. Discard skin. Add remaining 11/2 teaspoons chopped sage and 1 tablespoon butter to yams; mash until almost smooth. Season to taste with salt and freshly ground black pepper.
  • Sprinkle fish fillets with salt and freshly ground black pepper. Melt remaining 2 tablespoons butter in same nonstick skillet over medium-high heat. Add fish fillets and cook until golden brown on outside and just opaque in center, 3 to 4 minutes per side. If necessary, rewarm yams in microwave. Divide mashed yams among 4 plates. Top each serving with 1 fish fillet, sprinkle generously with pancetta-sage breadcrumbs, and serve.
