Not sure where I picked up this recipe. I like the addition of oats and nuts which a lot of other coconut cookie recipes don't have. I don't like too much coconut so the oats and nuts tone down the coconut taste. I usually toast the coconut and nuts while preheating the oven.

1/2 cup butter
1/2 cup shortening
3/4 cup sugar
3/4 cup packed brown sugar
2 eggs
2 teaspoons vanilla
2 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
3/4 teaspoon salt
1 1/2 cups quick-cooking oats
1 1/2 cups flaked coconut, toasted
3/4 cup chopped walnuts, toasted

Steps:

  • Preheat oven to 375 degrees.
  • In a mixing bowl, cream butter, shortening and sugars until fluffy.
  • Add eggs and vanilla, beat well.
  • Combine flour, baking powder, baking soda and salt.
  • Gradually add to creamed mixture.
  • Fold in oats, coconut and nuts.
  • Drop by tablespoonfuls onto greased baking sheets.
  • Bake at 375 degrees for 10-11 minutes or until golden brown.
  • Cool 2-3 minutes before removing to a wire rack.

1 1/2 cups sweetened flaked coconut
1 1/4 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1 1/4 sticks (1/2 cup plus 2 tablespoons) unsalted butter, softened
1/2 cup packed light brown sugar
1/4 cup granulated sugar
1 large egg
1 teaspoon vanilla

Steps:

  • Preheat oven to 375°F.
  • In a shallow baking pan spread coconut evenly and lightly toast in middle of oven, stirring once, until pale golden, 4 to 5 minutes. Cool coconut.

1 cup shortening
1 cup sugar
1 cup packed brown sugar
2 large eggs, room temperature
1 teaspoon vanilla extract
2 cups all-purpose flour

1 teaspoon baking soda

1 cup old-fashioned oats
1 cup sweetened shredded coconut

Steps:

  • In a large bowl, beat shortening and sugars until blended. Beat in eggs and vanilla. In another bowl, whisk flour, baking powder, baking soda and salt; gradually beat into sugar mixture.
