Time 50m

Number Of Ingredients 7

1/2 c butter
1 1/2 c graham cracker crumbs
(1) 14oz can(s) sweetened condensed milk
1 1/4 c almond toffee bits (if you can not find almond toffee bits, you can substitute 1-1/4 cups chopped slivered almonds)
1 1/4 c english toffee bits or crushed english toffee candy bars
1 c (6 ounces) semisweet chocolate chips
1 1/2 c chopped pecans

Steps:

  • 1. Preheat oven to 325 degrees. Place butter in a 9- x 13-inch baking dish. Heat 4 minutes or until butter melts. Layer graham cracker crumbs and remaining ingredients in baking dish with melted butter.
  • 2. Firmly press mixture into baking dish. Bake 25 minutes or until edges are lightly browned. Cool completely in baking dish on a wire rack. Cut into bars.

Tips:

  • To ensure the toffee layer sets properly, use a heavy-bottomed saucepan and cook the mixture over medium heat, stirring constantly.
  • Use a silicone spatula to spread the toffee mixture evenly over the cookie base, as it tends to stick to regular spatulas.
  • Allow the toffee layer to cool and set completely before cutting the bars, otherwise they will be too soft and crumbly.
  • For a richer toffee flavor, use brown sugar instead of granulated sugar.
  • Add a pinch of salt to the cookie dough to balance the sweetness of the toffee layer.
  • If you don't have chocolate chips, you can use chopped nuts, dried fruit, or even crushed candy bars as mix-ins.
  • Store the toffee cookie bars in an airtight container at room temperature for up to 3 days, or in the refrigerator for up to 2 weeks.

Conclusion:

These toffee cookie bars are a delicious and indulgent treat that are perfect for any occasion. With their chewy cookie base, rich toffee layer, and sweet chocolate chips, they're sure to be a hit with everyone who tries them. So next time you're looking for a special dessert, give these toffee cookie bars a try - you won't be disappointed!
