Categories     Food & Cooking     Seasonal Recipes     Spring Recipes

Number Of Ingredients 12

1 halved lemon
4 thinly sliced large artichoke hearts
1/4 cup extra-virgin olive oil
2 minced large cloves garlic
Coarse salt, to taste
1/4 teaspoon crushed red-pepper flakes
1 tablespoon roughly chopped parsley
2 tablespoons finely julienned basil
Freshly ground black pepper, to taste
1 cup Italian dry vermouth
5 tablespoons tomato sauce (preferably homemade)
1/2 cup Homemade Chicken Stock

Steps:

  • Squeeze juice from lemon into bowl of ice water; add lemon halves and artichoke hearts while preparing the rest.
  • In a large skillet over medium heat, add oil, garlic, and salt. Stir in red-pepper flakes, parsley, basil, salt, and black pepper, and saute, stirring for 5 minutes. Add vermouth, and cook for 2 minutes. Add tomato sauce and chicken stock. Cook until slightly reduced, about 5 minutes.

Tips:

  • Use ripe, flavorful tomatoes: This will ensure that your sauce has a rich, delicious taste.
  • Roast the tomatoes before adding them to the sauce: This will caramelize the sugars in the tomatoes and give them a smoky flavor.
  • Don't overcook the sauce: Alfredo sauce is best when it is creamy and smooth, so avoid cooking it for too long.
  • Add the artichokes at the end of cooking: This will prevent them from becoming tough.
  • Garnish the sauce with fresh herbs, such as basil or parsley: This will add a pop of color and flavor.

Conclusion:

Tomato Alfredo sauce with artichokes is a delicious and versatile sauce that can be used on a variety of dishes, such as pasta, chicken, or fish. It is easy to make and can be tailored to your own taste preferences. Whether you are a beginner cook or a seasoned pro, this sauce is sure to impress.
