4 tablespoons butter
½ medium onion, chopped
1 (8 ounce) package sliced mushrooms

⅔ (8 ounce) jar sun-dried tomatoes, packed in oil
1 (2 ounce) can sliced black olives, drained
10 ounces marinated artichoke hearts
1 cup dry white wine
2 tablespoons lemon juice
1 ripe tomato, chopped
1 cup Parmesan cheese
1 teaspoon black pepper

Steps:

  • Fill a large pot with lightly salted water and bring it to a rolling boil.
  • While the water is heating, melt the butter over medium heat in a large saucepan. Add the onions, mushrooms, and garlic; cook and stir until tender, about 5 minutes.

1 cup chopped onion
1 cup sliced fresh mushrooms
1/2 teaspoon minced garlic
1 can (14-1/2 ounces) diced tomatoes, undrained

1 can (6 ounces) tomato paste
2 tablespoons minced fresh basil or 2 teaspoons dried basil
1 teaspoon sugar

Steps:

1/2 cup shredded basil leaves plus small leaves for garnish
1/2 teaspoon kosher coarse salt
1/4 teaspoon freshly ground pepper

  • 1. Bring a large pot of water to a boil and season with a generous tablespoon of kosher salt. Add the pasta and cook according to package directions until al dente - just slightly firm to the bite. Drain the pasta, reserving 1 cup of the cooking water. 2.
