Yield Makes 4 main-course servings

Number Of Ingredients 9

1/4 cup olive oil
3 1/2 cups chopped onions
2 medium fennel bulbs with fronds; bulbs cored, thinly sliced, fronds chopped and reserved
3 large garlic cloves, minced
2 14 1/2-ounce cans diced tomatoes in juice
2 cups (or more) vegetable broth
8 ounces fresh crabmeat, picked over
Additional olive oil
4 1/2-inch-thick slices pain rustique or rustic whole wheat bread, toasted

Steps:

  • Heat 1/4 cup oil in heavy large pot over medium-high heat. Add onions, fennel slices, and garlic; sprinkle lightly with salt and pepper. Sauté until onions and fennel are tender, stirring often and adjusting heat to medium if browning too quickly, about 15 minutes. Add tomatoes with juice and 2 cups broth and bring to boil. Reduce heat, cover, and simmer until flavors blend and vegetables are very tender, about 15 minutes. Stir in crabmeat and add more broth by 1/4 cupfuls to thin soup, if desired; simmer just until heated through, 3 to 4 minutes. Season soup with salt and pepper.
  • Divide soup among bowls. Sprinkle each with chopped fennel fronds. Drizzle each serving with oil. Serve with toasts.

2 tablespoons vegetable oil
1/2 pound (about 2 medium) fennel bulbs, chopped, fronds discarded
3 celery ribs, chopped
1 onion, chopped
2 cloves garlic, chopped
1/4 cup Pernod liqueur (optional)
1/2 bunch fresh dill, stems removed (1/4 cup trimmed)

Tips:

  • Choose ripe, flavorful tomatoes. This will give your soup the best possible flavor. Look for tomatoes that are deep red and have no blemishes. If you can't find ripe tomatoes, you can use canned tomatoes instead.
  • Use fresh fennel. Fennel has a unique flavor that pairs well with tomatoes and crab. If you can't find fresh fennel, you can use dried fennel seeds. However, fresh fennel will give your soup a much better flavor.
  • Don't overcook the crab. Crab cooks very quickly, so be careful not to overcook it. Overcooked crab will be tough and chewy. Cook the crab for just a few minutes, until it is opaque and tender.
  • Season your soup to taste. This soup is delicious with a variety of seasonings. Try adding salt, pepper, garlic powder, onion powder, or paprika. You can also add a pinch of cayenne pepper if you like a little spice.
  • Serve your soup hot. This soup is best served hot, so make sure to reheat it before serving if you have made it ahead of time.

Conclusion:

This tomato fennel and crab soup is a delicious and easy-to-make soup that is perfect for a quick and easy meal. It is also a great way to use up leftover crab meat.
