GRILLED CORN AND TOMATO SALAD WITH THAI BASIL VINAIGRETTE DRESSING

Grilled Corn and Tomato Salad with Thai Basil Vinaigrette Dressing image

Provided by Food Network

Categories     side-dish

Time 1h

Yield 4 servings

Number Of Ingredients 16

8 large ears corn
Kitchen twine
1 small or 1/2 large red onion, finely chopped
2 cups grape tomatoes, quartered lengthwise
4 to 5 large Thai basil leaves, roughly chopped
Kosher salt and freshly cracked black pepper
1/2 cup chopped Thai basil leaves
1/2 cup chopped cilantro leaves
1/4 cup lime juice
1/4 cup orange juice
1 tablespoon honey
2 teaspoons freshly grated ginger
1 teaspoon lime zest
1/2 teaspoon kosher salt
1/2 teaspoon fresh cracked black pepper
1/4 cup canola oil

Steps:

  • Preheat a grill to medium-high heat.
  • Salad: Peel back the corn husks, but do not remove them completely. Carefully pick off and discard the wispy silk threads that are attached to the corn. Pull the husks back over the ears and tie the ends closed with kitchen twine. Soak the corn in large bowl of cold water for 10 minutes. Drain the water, shake off the excess and put them on the grill for 15 minutes, turning every 3 to 4 minutes until the corn is tender. Remove them from the grill and let the ears cool to room temperature.
  • Vinaigrette: While the corn is cooling, prepare the dressing. Puree all the ingredients, except the canola oil, in a blender or food processor. After the mixture is well incorporated, slowly drizzle in the canola oil while the processor is still running. Blend for 30 seconds, then transfer the dressing to a bowl.
  • Assembly: Once the corn has cooled, cut the kernels off the cobs into a medium bowl and discard the cobs. Add the red onion and grape tomatoes and mix to combine. Drizzle in 1/2 cup of the Thai Basil Vinaigrette Dressing while lightly tossing the salad together. Reserve the remaining dressing. Gently stir in the basil leaves. Season the salad with salt and pepper to taste, and add more dressing, if desired. Serve slightly chilled on serving plates, using a slotted spoon to keep excess liquids in the bowl.

ROASTED TOMATO BALSAMIC VINAIGRETTE

Roasted Tomato Balsamic Vinaigrette image

I once worked with a chef who made an amazingly delicious roasted tomato vinaigrette. He would roast a whole pan of Roma tomatoes until the sugars and acids would condense and caramelize and concentrate into a delicious mass. I thought I could duplicate it by using a really good, double-concentrate tomato paste and nicely aged balsamic vinegar. It worked.

ROASTED OR GRILLED WHOLE FISH WITH TOMATO VINAIGRETTE

Roasted or Grilled Whole Fish With Tomato Vinaigrette image

There are a number of good reasons to roast or grill a whole fish. Fish tastes better cooked on the bone. It's just as easy as roasting meat or fowl, and is done in half the time. And a whole fish is apt to be fresher than many of the other choices at the fishmonger. A two-pound fish will serve two.

Provided by David Tanis

Categories     dinner, main course

Time 30m

Yield 4 servings

Number Of Ingredients 15

2 whole fish, such as branzino, blackfish or striped bass, about 2 pounds each, gutted and scaled
Salt and pepper
A few thyme sprigs
A few rosemary sprigs
A few parsley sprigs
A few fennel fronds
A few basil leaves
1 small lemon, thinly sliced
Extra-virgin olive oil
1 shallot, finely diced
3 tablespoons red wine vinegar
Salt and pepper
2 cups diced tomatoes, or use halved cherry tomatoes instead
1/4 cup olive oil
2 tablespoons roughly chopped basil or parsley

Steps:

  • Rinse fish with cool water and pat dry. Season generously on both sides with salt and pepper. Season the cavity with salt and pepper. Tuck thyme, rosemary and parsley sprigs in cavity of each fish. Add fennel fronds, basil leaves and lemon slices. Drizzle olive oil on both sides of fish, then place on a parchment-lined rimmed baking sheet. Leave at room temperature. (May season and refrigerate fish up to 2 hours in advance. Bring to room temperature before cooking.) Heat oven to 450 degrees.
  • Make the vinaigrette: Put shallot in a small serving bowl. Add vinegar and a good pinch of salt. Leave to steep 5 minutes, then whisk in olive oil. Season tomatoes with salt and pepper and spoon them into the olive oil mixture. Add basil and stir gently. Leave at room temperature.
  • Place fish on top shelf of oven and roast, uncovered, for 15 to 20 minutes, until fish is firm when probed and flakes at the thickest part. Take from oven and let rest 5 minutes. To serve, use a small knife, soup spoon and spatula to remove top fillets. Pull spine away to reveal bottom fillets. Transfer fillets to a platter or individual plates. Spoon a little tomato vinaigrette over each portion and pass the rest at the table.
  • Alternatively, if you are grilling the fish, prepare a bed of hot coals. Make sure the grill is cleaned with a wire brush and lightly oiled. Lay the fish directly on the grill and cook for 7 to 8 minutes. Do not attempt to turn fish until the skin has browned and crisped or it will stick. Carefully turn fish and cook for another 7 to 8 minutes, until fish is firm when probed and flakes at the thickest part. To serve, proceed as in Step 3.

3 garlic cloves, divided
1 (1-1 1/2-pound) hanger steak, center membrane removed, cut into 4 pieces

Add tomatoes, bread, and basil and toss just to combine. Top with steak and sprinkle with sea salt.

EASY TOMATO BALSAMIC VINAIGRETTE

Easy Tomato Balsamic Vinaigrette image

I can't take credit for this recipe. A friend of mine who is a chef gave me this and I love it. Serve over grilled vegetables, fish and of course your favorite salad greens. One note, using a tube of the "double-concentrated" tomato paste really does make a big difference, as well as using an aged Balsamic. But I have made it with every day Balsamic and "standard" tomato paste and it still is pretty tasty. I think the rice vinegar is very important to use, and shouldn't be substituted in this recipe.

Provided by SarasotaCook

Categories     Salad Dressings

Time 4m

Yield 1/2 cup or 8-9 tablespoons, 8 serving(s)

Number Of Ingredients 8

1 tablespoon tomato paste (double-concentrated)
1 tablespoon balsamic vinegar (a good quality vinegar is best if possible)
1 tablespoon rice vinegar
6 tablespoons olive oil
1/2 teaspoon minced shallot
1/2 teaspoon Dijon mustard
salt
pepper

Steps:

  • Dressing -- Just mix everything together and refrigerate until ready to use. I use a small tupperware container and shake all the ingredients. That way if you have leftovers, it is a great way to store them.
  • ENJOY!

BIG BEANS AND TOMATO VINAIGRETTE

Big Beans and Tomato Vinaigrette image

If you'd like, soak the beans overnight before cooking; it will help them cook more quickly and evenly. The key thing, though, is to be very gentle with the beans while they simmer so they don't break apart in the process.

Provided by Kelly Mariani

Categories     Bon Appétit     Summer     Side     Salad     Bean     Tomato     Basil     Onion     Carrot     Garlic     Vegetarian     Vegan     Soy Free     Dairy Free     Peanut Free     Wheat/Gluten-Free     Herb     Tree Nut Free

Yield 4 servings

Number Of Ingredients 19

Beans:
Handful of oregano sprigs
Handful of thyme sprigs
2 bay leaves
8 oz. dried butter beans, rinsed, soaked overnight if possible
1 medium onion, halved
1 large carrot, scrubbed, coarsely chopped
Kosher salt
1/4 cup extra-virgin olive oil
Vinaigrette and assembly:
10 oz. cherry tomatoes or 1 1/2 cups chopped heirloom or beefsteak tomatoes
1 garlic clove, smashed
3 Tbsp. red wine vinegar
1/3 cup extra-virgin olive oil, plus more for drizzling
Kosher salt
2 lb. assorted heirloom, beefsteak and/or cherry tomatoes
Freshly ground black pepper
Handful of basil leaves
Mild red pepper flakes (such as Aleppo-style or Maras)

Steps:

  • Beans:
  • Tie together oregano, thyme, and bay leaves with kitchen twine. Combine beans, onion, carrot, and herbs in a medium pot. Pour in water to cover beans by about 4" and bring to a very gentle simmer over medium-high heat. Immediately reduce heat and cook at the barest of simmers, stirring hardly at all, until beans are creamy and tender at the center but not falling apart or mushy, about 1 1/2 hours (this could take longer, depending on the beans). The key is to not agitate, which will help the beans maintain their shape. Remove pot from heat; season beans aggressively with salt. Gently stir in oil. Let cool. Drain beans; discard onion, carrot, and herbs.
  • Do Ahead: Beans can be made 2 days ahead. Keep in liquid; cover and chill.
  • Vinaigrette and assembly:
  • Purée cherry tomatoes in a blender. Transfer to a small bowl and stir in garlic, vinegar, and 1/3 cup oil; season with salt. Let sit 15-20 minutes, then pluck out garlic.
  • Transfer drained beans to a medium bowl and add vinaigrette; toss gently to coat. Taste and add more salt if needed.
  • Slice, halve, or quarter heirloom tomatoes and arrange on a platter or divide among individual plates. Season with salt and pepper and drizzle with oil. Spoon beans along with plenty of vinaigrette over; top with basil and a few pinches of red pepper flakes.

Tips:

  • Utilize ripe, flavorful tomatoes: The quality of your tomatoes directly impacts the taste of your vinaigrette. Choose vine-ripened tomatoes whenever possible, as they offer the sweetest and most intense flavor.
  • Experiment with different types of tomatoes: There are many varieties of tomatoes available, each with its unique flavor profile. Try using different types, such as cherry tomatoes, heirloom tomatoes, or Roma tomatoes, to create a vinaigrette with a distinct taste.
  • Balance the flavors: A well-balanced vinaigrette should have a harmonious blend of acidity, sweetness, and saltiness. Adjust the proportions of vinegar, sugar, and salt to create a vinaigrette that suits your taste.
  • Incorporate herbs and spices: Herbs and spices can add depth and complexity to your vinaigrette. Try adding fresh basil, oregano, thyme, or rosemary. You can also add a pinch of garlic powder, onion powder, or paprika for a savory touch.
  • Use a good quality olive oil: The type of olive oil you use will significantly impact the flavor of your vinaigrette. Choose an extra virgin olive oil that is fruity and flavorful. Avoid using bland or rancid olive oil.
  • Emulsify the vinaigrette properly: Emulsifying the vinaigrette means combining the oil and vinegar until they form a smooth and creamy mixture. This can be done by whisking vigorously or using a blender. A well-emulsified vinaigrette will have a velvety texture and will not separate.

Conclusion:

With its versatility and ease of preparation, tomato vinaigrette has become a staple in many kitchens. Whether you are using it as a dressing for salads, marinating grilled meats, or drizzling over roasted vegetables, this tangy and flavorful vinaigrette is sure to enhance the taste of your dishes. By following these tips and experimenting with different ingredients, you can create a tomato vinaigrette that perfectly complements your culinary creations. So, embrace the versatility of tomato vinaigrette and let it become your go-to dressing for a variety of dishes.
