I was looking for something to eat for supper and browsed what I had on hand and I came up with this recipe. I have posted this on a local TV stations website and now it has gone national.

Number Of Ingredients 10

1 pint heavy cream
1/2 cup butter
4 ounces cream cheese
1 leek, thinly sliced
3/4 cup parmesan cheese
1 teaspoon garlic powder, add in more to suit your taste if you prefer
salt and pepper, to taste
1 lb frozen shrimp (I prefer using salad shrimp)
1 lb cheese tortellini pasta, cooked and drained
garnish with parsley or chives, for decoration

Steps:

  • Cook tortellini as directed on package. Meanwhile, thaw the frozen shrimp in a colander using cold running water. Remove the tails. If using uncooked shrimp, devein and remove tails and then sauté in a teaspoon of the butter. Remove shrimp and set aside. Do not overcook. In a saucepan combine butter, heavy cream, and cream cheese. Simmer this until all is melted, and mixed well. Add the Leeks, Parmesan Cheese and garlic powder. Simmer this for 15 - 20 minutes over low heat. Toss the tortellini with the shrimp and sauce, coating well. Add the parsley or chives and serve.

This dish requires a bit of multitasking but the end result--a filet mignon nestled over mushrooms and tortellini coated with Alfredo sauce--is worth it! Psst... after you get the photo, please cut the filet mignon into strips. Serves 2 hungry people or 3 with smaller appetites.

¾ pound filet mignon
½ teaspoon garlic salt
¼ teaspoon granulated onion
¼ teaspoon ground black pepper
1 (9 ounce) package refrigerated cheese tortellini
1 tablespoon salted butter
3 each portobello mushrooms, quartered
1 tablespoon salted butter
1 clove garlic, minced
1 tablespoon all-purpose flour
1 cup fat-free half-and-half
1 cup freshly shredded Parmesan cheese
1 pinch grated nutmeg

Steps:

  • Season filet mignon on both sides with garlic salt, granulated onion, and pepper. Set aside.
  • Fill a large pot with lightly salted water and bring to a rolling boil; stir in tortellini and return to a boil. Cook uncovered, stirring occasionally, until the tortellini float to the top and the filling is hot, about 3 minutes.
  • Meanwhile, set a grill pan over medium high-heat. Melt butter in the hot pan. Add filet and quartered mushrooms. Cook the filet for 3 minutes per side. Cook mushrooms for 1 to 2 minutes. Remove filet, cover, and allow to rest.
  • Meanwhile, for the sauce, melt butter in a saucepan over medium-high heat. Add garlic and cook until fragrant, about 30 seconds. Push garlic to the side of the pan and stir in flour until smooth. Slowly add half-and-half, stirring until sauce thickens. Stir in Parmesan cheese and nutmeg.
  • Cut filet into strips. Distribute tortellini among the plates, drizzle with sauce, and top with steak strips and mushrooms.

1/2 cup chopped onion
1/3 cup butter, cubed
1-1/2 cups frozen peas, thawed

1/4 teaspoon coarsely ground pepper

1 (16 ounce) box dry fettuccine pasta
1 pint heavy whipping cream
1 ¼ cups butter, divided
¾ cup grated Romano cheese
½ cup grated Parmesan cheese
3 cloves garlic, crushed, divided
salt and ground black pepper to taste
2 tablespoons olive oil
1 large onion, chopped
8 ounces diced mushrooms
1 (8 ounce) package frozen shrimp, deveined and tails removed, thawed

Steps:

  • Fill a large pot with lightly salted water and bring to a rolling boil. Stir in fettuccine, bring back to a boil, and cook over medium heat until tender yet firm to the bite, about 8 minutes. Drain.

This is a very simple shrimp and pasta dish that I love. I recommend using fresh basil because the flavor is better.

1 lb unpeeled medium shrimp
1 (9 ounce) package fresh tortellini, with cheese filling uncooked
1/3 cup butter or 1/3 cup margarine
1 shallot, minced
2 tablespoons chopped fresh basil or 2 teaspoons dried basil
1/2 cup grated parmesan cheese

Steps:

  • Peel/devein shrimp and set aside.
  • Cook the tortellini by following the package directions; drain and set aside.
  • In a big skillet over medium-high heat, melt the butter.
  • Add in the shrimp, shallot, and basil.
  • Saute/stir for about 5 minutes.
  • Add tortellini and parmesan cheese; toss; season with salt and pepper if desired, then serve.
