For the Salad:
4 10-12 ounce bags frozen tortellini, cooked in boiling water until just done then cooled on a long baking tray
1 tablespoon olive oil stirred into the tortellinis while cooling, plus 1 tablespoon olive oil when salad ingredients are mixed
1/2 cup sun dried tomatoes, not in oil, sliced thinly, then halved
1 1/2 cups cherry or grape tomatoes, halved, any larger tomatoes in the batch quartered
1 16 ounce can artichoke hearts, quartered then cut in half
6 scallions, green part included, thin, chopped finely
1/2 cup fresh parsley, chopped
1/2 cup fresh basil, sliced chiffonade, then cut in half
1 teaspoon coarse kosher salt, and more to taste
1 teaspoon cracked black pepper
For the Dressing:
6 medium size tomatoes, cored, cut in half, grated on a hand grater down to the skin, discard skin and transfer grated tomatoes to a mixing bowl
2 cloves garlic, chopped
1/8 cup white wine vinegar
1/2 cup extra virgin olive oil
1/2 teaspoon kosher salt
1/2 teaspoon cracked black pepper

  • For the Tortellini Salad: Into a long rectangular dish or container that has a fitted lid, gently combined the cooked, cooled tortellinis mixed with a tablespoon olive oil, the sun dried tomatoes, cherry tomatoes, artichoke hearts, and scallions. Stir the other one tablespoon of olive oil throughout the salad then fold in the fresh herbs, along with the salt and pepper, refrigerate until a few hours before serving. For the Dressing Scrape the grated tomatoes into a large glass mixing bowl then stir in the chopped garlic. Pour in the vinegar,drizzle in olive oil a little at a time whisking to incorporate with the tomato mixture. Add in the salt and pepper, check seasoning adding a little more salt and pepper to suited taste. Refrigerate until 3 hours before serving. Salad Assembly: Three hours before serving whisk dressing together then pour half into the Tortellini Salad and stir throughout. Immediately before serving salad pour in the remaining dressing and stir, adding in any extra seasoning with salt and pepper to taste. Transfer Tortellini Salad from container to a large serving platter lined with fresh greens if desired. Notes If the tortellini salad is mixed with the dressing too far in advance the tortellini will absorb the dressing taking the flavor from the tortellini's as well as losing the bright red color of the red tomatoes in the dressing.

ITALIAN DRESSING:
1/2 c olive oil, extra virgin
1/4 c white wine vinegar
2 tsp granulated sugar
1 tsp honey
1 tsp lemon juice
1/4 tsp coarse ground mustard
2 Tbsp finely grated asiago cheese
1 Tbsp finely grated parmesan cheese
3/4 tsp garlic salt
3/4 tsp dry parsley flakes
3/4 tsp dry basil flakes
1/8 tsp dry oregano
1 pinch red pepper flakes
1 pinch freshly ground black pepper
1 small pinch paprika
1 small pinch onion powder
1 pinch fine pink himalayan salt or sea salt
**1 - 2 Tbsp water **only if using dressing on a lettuce salad
SALAD:
12 - 15 cherry tomatoes, quartered (i use red and yellow)
3 - 4 slice sweet bell pepper, chopped small (orange, red or yellow)
12 kalamata olives, sliced in thirds
12 - 15 slice pepperoni, quartered or cut in 1/6
3 large fresh basil leaves, chiffonade or chopped
3 - 4 Tbsp prepared italian dressing
6 oz dried 3 cheese tortellini (or your favorite tortellini, amount for 2 - 3 people; i use barilla.)
1/2 Tbsp fresh chives

Steps:

  • 1. (* Important: It's best to make dressing at least one day ahead of time and store in refrigerator; remove from refrigerator, at least 1/2 hour before using, to allow solidified olive oil to liquify; shake well. )
  • 2. Add all dressing ingredients to a pint jar with a tight fitting lid and shake well, or whisk together in a medium bowl; cover and refrigerate. Shake or mix well right before using.
  • 3. To a large bowl, add tomatoes, bell peppers, olives, pepperoni and half of the fresh basil. Set aside, temporarily.
  • 4. Cook tortellini according to package instructions; drain and rinse with cold water to cool (to avoid breakage, do NOT over-handle the tortellini.)
  • 5. Add 3 tablespoons Italian dressing to the tomato bowl; mix together well.
  • 6. Add well drained tortellini to tomato mixture; fold gently to combine and coat with dressing (add extra dressing, if desired.)

½ (10 ounce) package frozen peas
3 tomatoes, chopped
1 cup coarsely grated Parmesan cheese
1 bunch fresh chives, chopped

2 lemons, juiced
1 tablespoon white sugar
¾ teaspoon salt

2 cups arugula (baby or regular)
1 cup grated Parmesan
1 cup oil-packed sun-dried tomatoes
1/4 cup fresh basil leaves
1/4 cup lightly toasted walnuts
1 tablespoon freshly squeezed lemon juice
1 clove garlic
3/4 cup extra-virgin olive oil
Kosher salt and freshly ground black pepper

1 (8 ounce) package frozen cheese tortellini
1/2 white onions or 1/2 red onion
1/2 green bell pepper
1 (4 1/4 ounce) can black olives
1 -2 cup crumbled feta or 1 -2 cup shredded mozzarella cheese

1/4 cup red wine vinegar

  • Start by defrosting/cooking the cheese tortellini in a pot of boiling water. The tortellini are ready when they float in the water and are heated through. Move them to a colander to drain, and set aside.
  • Drain and coarsely chop the black olives (you can use pre-chopped olives to save time). Peel the onion, de-seed the pepper, and coarsely chop them as well.
  • Place chopped vegetables and cheese tortellini in a large bowl. Sprinkle desired amount of cheese (feta or mozzarella) and the olive oil and red wine vinegar over the vegetables and tortellini, and then toss it all together. If you are using mozzarella cheese, it will probably melt a bit, which is fine.
