- Place the first 5 ingredients in a bowl; toss lightly to combine. Reserve 1 cup berry mixture for sauce. For salsa, gently stir onion, lime juice, cilantro and salt into remaining mixture; let stand 30 minutes., Meanwhile, sprinkle pork with salt and pepper. In a large skillet, heat 1 tablespoon oil over medium-high heat. Add half the pork and cook until a thermometer inserted in pork reads 145°, 2-4 minutes on each side. Remove from pan. - Spray the bottom of a 9x13-inch glass baking dish with vegetable spray and place 1/2 of the bread cubes into the dish. Put cream cheese cubes on top. Distribute blueberries, blackberries, and raspberries over the cream cheese. Place remaining bread over the berries.
- Beat eggs in a bowl and add milk and maple syrup. Pour mixture over bread. Place plastic wrap over the dish and refrigerate, 8 hours to overnight.
- Preheat the oven to 350 degrees F (175 degrees C). Remove plastic wrap from the dish and cover the dish with aluminum foil.
