1/2 cup butter
1/2 cup brown sugar
1/2 cup white sugar
1 cup mashed banana
1/2 cup crushed pineapple
2 cups sifted flour
1 tsp baking powder
1 tsp baking soda
3/4 tsp salt
3 eggs
1/4 cup milk
1 tsp vanilla
1/2 cup chopped nuts

Steps:

  • Cream butter and sugars thoroughly. Blend in fruit. In separate bowl, sift remaining dry ingredients into flour. In a 3rd bowl, combine eggs, milk and vanilla. Add dry ingredients alternately with liquid to creamed mixture. Fold in nuts. Pour into 2 small well-greased loaf pans. Bake at 350 degrees for 50 minutes to an hour.

Tips:

  • Choose ripe, flavorful fruits: Using ripe fruits will ensure your bread is bursting with tropical flavor. Look for fruits that are brightly colored and slightly soft to the touch.
  • Don't be afraid to mix and match fruits: The beauty of tropical fruit bread is that you can use any combination of fruits you like. Experiment with different flavors and textures to create a bread that's uniquely yours.
  • Use a variety of spices and extracts: Spices and extracts can help to enhance the flavor of the tropical fruits and create a more complex bread. Some popular choices include cinnamon, nutmeg, ginger, and vanilla extract.
  • Don't overmix the batter: Overmixing the batter will make the bread tough. Mix just until the ingredients are combined.
  • Bake the bread in a loaf pan: A loaf pan will help to ensure that the bread bakes evenly. If you don't have a loaf pan, you can also bake the bread in a 9-inch round cake pan.
  • Let the bread cool completely before slicing: This will help to prevent the bread from crumbling.
