1/2 cup butter, divided
12 slices white bread, divided
2 (7 ounce) cans white albacore tuna in water, drained
1/2 cup chopped celery
1/2 cup finely chopped onion
1/3 cup mayonnaise
1 1/2 cups shredded swiss cheese
5 large eggs
1 teaspoon Old Bay Seasoning
2 cups milk
1 teaspoon dijon-style mustard
1/4 teaspoon hot pepper sauce
2 tablespoons finely chopped dill pickles (or you can use dill relish)

Steps:

  • Generously grease a 12x8 baking dish.
  • Trim 6 slices of bread to fit bottom of the dish.
  • Butter top of each slice of bread with 1/2 tsp of butter.
  • Place bread slices butter side up in baking dish.
  • In a medium bowl, flake tuna and add celery, onion, pickles, Old Bay Seasoning and mayonnaise. Mix well.
  • Spread tuna mixture over bread and sprinkle with cheese.
  • Trim other 6 slices of bread and butter tops.

6 large eggs
1 1/2 cups milk
1/2 cup half-and-half
Pinch of ground nutmeg

3 handfuls dark, leafy greens such as spinach, arugula or baby kale, chopped (about 1 cup packed)
1 cup diced salty deli meat, such as Canadian bacon, ham, or cooked bacon
8 ounces (about 2 1/2 packed cups) leftover bread torn into 1-inch pieces, such as English muffins, bagels or sourdough bread
3/4 cup shredded mild melting cheese such as Gruyere, provolone or Gouda

Steps:

I became friends with the older lady that always worked the deli and she gave me the recipe. I will never forget what she told me.."The more colors in your Tuna, the better the flavor" sadly, the deli went out of business, but I never forgot her recipe. This tuna has lots of veggies in it, but if you dice them very small, it's so good! Remember, Tuna is a finicky meal.. too much mayo makes it watery and too little makes it dry and fishy.. be sure to use your best judgement and liking. (This recipe makes a lot) you can lessen it

2 (12 ounce) cans of solid albacore tuna (in water)
1 small green bell pepper (finely diced)
1 small red bell pepper (finely diced)
1 small onion (finely diced)
