Sandwich bread
Sliced turkey meat, to taste
Cream cheese, to taste
Cranberry sauce, to taste
Alfalfa sprouts, to taste
Roasted sunflower seeds, to taste
Mayonnaise, to taste

Steps:

  • Smear some mayonnaise on bottom bread slice and season with a small amount of salt. Layer turkey on top of mayonnaise,. To slice turkey, remove the breast from the turkey and then slice perpendicular to the bottom where the bone was, results in great, tender slices of meat. Either spread soft cream cheese or place slices from regular cream cheese on top of turkey, don't skimp here. Dollop generous spoonful of cranberry sauce on top of turkey and spread to edges. I use whatever version I've made for the holiday, including my Merlot, Molasses and Toasted Walnut version. Put a small handful of alfalfa sprouts on top of sauce. Sprinkle with toasted sunflower seeds and top with bread slice. Cut in half and serve with chips and or pickle spears.

sandwich bread (i use orowheat oat-nut whole grain)
sliced turkey
cranberry sauce
plain soft cream cheese
alfalfa spouts
sunflower seeds
mayonnaise

Steps:

Use either your own roasted turkey or rotisserie roasted turkey from the grocery store, but NOT packaged deli meat. 8 slices sourdough bread or 8 slices multigrain bread, toasted
4 slices roasted turkey breast (about 12 ounces)
1/4 cup cashews, toasted and coarsely chopped
4 ounces cream cheese, softened
2 tablespoons mayonnaise
1/4 cup dried cranberries, coarsely chopped
1/2 teaspoon dried sage or 1 teaspoon fresh sage, minced
1 tablespoon lemon juice
salt, to taste
fresh cracked black pepper, to taste

Steps:

  • *In a bowl combine the cream cheese spread ingredients.
  • Toast the bread; spread all slices with the cream cheese mixture. Garnish with the cashews.
  • Add one slice of turkey to each sandwich.
  • Put bread slices together and cut in half or quarters.

2 slice bread
2 Tbsp cream cheese, softened
2 Tbsp cranberry sauce (I use my homemade cranberry relish)
1 Tbsp low-fat mayonnaise (optional--I usually omit it, but most of my family prefers it)
2 slice cooked turkey (great use of your leftover thanksgiving turkey)
1/2 tsp salt
1/2 tsp black pepper
1 romaine lettuce leaf

Steps:

  • 1. Lightly toast both slices of bread. Spread cream cheese on both halves while bread is still hot, so the cream cheese melts justly slightly. Add mayonnaise, if you wish.
  • 2. Spread cranberry sauce on both slices of toasted bread with cranberry sauce (or cranberry relish).
