TURMERIC ROTINI SALAD

Turmeric has become quite the "buzz" word, in the last couple of years, and I found a turmeric rotini. It has a nice yellow color, and very mild, if any turmeric flavor. You can start fresh with this salad, or use small amounts of leftover vegetables, if you like.

  • Marinate the Vegetables: Marinating the vegetables in a mixture of olive oil, lemon juice, herbs, and spices enhances their flavor and tenderness.
  • Don't Overdress the Salad: Use a light hand when dressing the salad to avoid overpowering the flavors of the ingredients.
  • Add Some Crunch: Incorporate crunchy elements like toasted nuts, seeds, or crispy vegetables for added texture.
  • Serve Fresh: For the best taste and texture, serve the turmeric rotini salad fresh. Leftovers can be stored in the refrigerator for a few days, but the rotini may soften over time.
