TWO-BEAN AND TUNA SALAD

Two-Bean and Tuna Salad image

This is the most amazing version of tuna and bean salad I've ever tasted. It incorporates crunchy green beans, a red onion made a little milder by soaking in water, tuna and a bean of your choice. I've used a lush bean called Good Mother Stallard, which really makes this salad stand out. You can substitute borlotti beans, pinto or white beans. If you're using canned beans, rinse them first. Whichever bean you choose, you'll have an amazing light and satisfying meal.

Provided by Martha Rose Shulman

Categories     dinner, lunch

Time 15m

Yield 6 Servings

Number Of Ingredients 13

3/4 pound green beans, trimmed
1 small red onion, cut in half and sliced in half-moons (optional)
2 5-ounce cans tuna (packed in water or olive oil), drained
1 1/2 cups cooked Good Mother Stallard, borlotti, pinto or white beans (if using canned beans, rinse)
2 tablespoons chopped fresh parsley
2 tablespoons chopped chives
2 teaspoons chopped fresh marjoram or sage
2 tablespoons sherry vinegar or red wine vinegar
Salt to taste
1 garlic clove, minced or puréed
1 teaspoon Dijon mustard
2 tablespoons bean broth
6 tablespoons extra-virgin olive oil

Steps:

  • Bring a medium-size pot of water to a boil and add salt to taste. Blanch green beans for 4 minutes (5 minutes if beans are thick), until just tender. Transfer to a bowl of cold water and drain. (Alternatively, steam beans for 4 to 5 minutes). Cut or break beans in half if very long.
  • Meanwhile, place sliced onion, if using, in a bowl and cover with cold water. Soak 5 minutes. Drain, rinse and drain again on paper towels.
  • Drain tuna and place in a salad bowl. Break up with a fork. Add cooked dried beans, green beans, onion and herbs. Toss together.
  • In a small bowl or measuring cup, whisk together vinegar, salt, garlic, mustard and bean broth. Whisk in olive oil. Toss with tuna and bean mixture, and serve.

TURKEY WITH TWO SALADS

Turkey with Two Salads image

A pair of salads refresh leftover Spice-Rubbed Turkey Breast made earlier in the week; the spinach and couscous are dolled up in low-fat Dijon dressing.

Provided by Martha Stewart

Categories     Food & Cooking     Ingredients     Meat & Poultry     Turkey Recipes

Time 40m

Number Of Ingredients 10

6 teaspoons olive oil
1 package (10 ounces) white mushrooms, trimmed and thinly sliced
Coarse salt and ground pepper
1 medium yellow onion, finely chopped
1 cup Israeli couscous
2/3 cup dried cranberries or cherries
1/4 cup fresh lime juice (from about 2 limes)
1 tablespoon Dijon mustard
3 packed cups loose spinach (about 5 ounces), trimmed, well washed and dried
1 pound cooked turkey, thinly sliced, room temperature

Steps:

  • In a large nonstick skillet with a lid, heat 1 teaspoon oil over medium-high. Add mushrooms, and season with salt and pepper. Cook, stirring occasionally, until mushrooms are browned and have released their liquid, 6 to 8 minutes. Transfer to a bowl; set aside.
  • Reduce heat to medium-low. In same skillet, heat 1 teaspoon oil. Add onion and cook, stirring occasionally, until translucent, 3 to 5 minutes. Stir in couscous, 1 1/4 cups water, and 1/2 teaspoon coarse salt; bring to a boil. Reduce to a simmer, cover, and cook until couscous is tender, 8 to 10 minutes (liquid should be completely absorbed). Stir in dried cranberries.
  • Meanwhile, make vinaigrette: In a large bowl, whisk together remaining 4 teaspoons oil, lime juice, and mustard; season with salt and pepper. Pour half the vinaigrette into another large bowl. To first bowl, add couscous mixture and mushrooms (along with any accumulated juice), and to the other, spinach. Toss contents of each bowl until well combined.
  • Divide spinach among 4 serving plates; top with turkey slices, and serve with couscous.

2 tsp dried oregano
1/2 tsp cracked black peppercorns
Zest of 1 lime
2 tbsp fine cornmeal
1 cup chicken or turkey broth
1 can (28 oz/796 mL) tomatoes with juice, coarsely chopped
2 lbs skinless boneless turkey breast, cut into 1/2-inch (1 cm) cubes (see tips)

Add chile powder solution, green and red bell peppers, mild green chiles, and jalapeño pepper, if using. Cover and cook on High for 30 minutes, until bell peppers are tender.

Tips:

  • For a vegetarian version of the salad, use crumbled tofu or tempeh instead of turkey.
  • Add a chopped hard-boiled egg or two for extra protein.
  • To make the salad more flavorful, try using a flavored mayonnaise, such as roasted garlic or herb mayonnaise.
  • If you don't have any celery on hand, you can substitute chopped cucumber or red bell pepper.
  • For a lighter version of the salad, use plain yogurt instead of mayonnaise.
  • To make the salad ahead of time, simply prepare all of the ingredients and then store them in separate containers in the refrigerator. When you're ready to serve, just combine the ingredients and enjoy.

Conclusion:

Two-bean turkey salad is a delicious and versatile dish that can be enjoyed as a sandwich, salad, or wrap. It's also a great way to use up leftover turkey. With its simple ingredients and easy preparation, this salad is sure to become a favorite in your kitchen.
