CHERRY BREAD PUDDING

Cherry Bread Pudding image

This is inspired by a recipe by the French baker Jacquy Pfeiffer, whose French Pastry School in Chicago is the only school of its kind in the country. Jacquy's recipe, called a bettelmann, is a traditional Alsatian dish made with day-old brioche. This version, made with regular or whole-wheat bread, is not as rich.

Categories     dessert

Time 3h

Yield 6 to 8 servings

Number Of Ingredients 12

4 ounces stale white or whole-wheat bread, crusts removed (weigh after removing crusts)
1 cup low-fat milk (2 percent)
1 teaspoon vanilla extract
Softened butter for the baking dish
3 eggs, separated
50 grams (1/2 cup) almond flour
1/2 teaspoon cinnamon
2 tablespoons mild honey, like clover
1/4 cup sugar
3/4 pound cherries, pitted
2 tablespoons sliced almonds, lightly toasted
1 teaspoon kirsch (optional)

Steps:

  • Cut the bread into 3/4-inch squares. Combine the milk and vanilla and toss with the bread in a medium bowl. Cover and refrigerate for 2 hours or longer.
  • Preheat the oven to 375 degrees. Butter a 9-inch ceramic tart pan or 2-quart baking dish. Arrange the pitted cherries in the dish.
  • Remove the soaked bread from the refrigerator and beat with a whisk or an immersion blender until it becomes a mush. Beat in the egg yolks, almond flour, cinnamon, kirsch if using, and honey.
  • In a clean, dry bowl or the bowl of a stand mixer fitted with the whip attachment, begin beating the egg whites on low speed. Gradually add the sugar, turn up the speed to high and whip until the egg whites form a soft meringue, about 1 minute. Be careful not to overbeat, as you do not want the mixture to dry out. Using a rubber spatula, gently fold the egg whites into the bread mixture. Scrape into the baking dish. Sprinkle the sliced almonds on top.
  • Bake 40 minutes, until puffed and golden brown. Serve warm.

SOUR CHERRY PUDDING CAKE

Sour Cherry Pudding Cake image

This dessert is best served warm with whipped cream or vanilla ice cream. It is also delicious cooled to room temperature. Plan on making it when it will be eaten within 36 hours. The soft cake part can become stale afterward. I tend to make this for company or for a dish to pass event. Preparation time does not include time for pitting cherries.

DOUBLE CHOCOLATE CHERRY BREAD PUDDING

Double Chocolate Cherry Bread Pudding image

I got this idea from "The Spirited Vegetarian" but I added and changed alot of things so that it is not the same recipe. I use the "heels" of loaves of bread - just toss them in the freezer until you have about 6-8 for this recipe. I also HIGHLY recommend the Ghirardelli brand of chocolates for this recipe - the quality is well worth the extra $$. This makes a very rich but smaller dessert (8X8) so it is perfect for a smaller family or gathering. The cookbook also recommends pairing it with a sherry-flavored whipped cream but we like it better unadorned so that the sweet chocolate and the tart cherry flavors really shine!

Time 1h15m

Yield Four servings

Number Of Ingredients 7

1 1/2 pounds fresh cherries, washed, stemmed and pitted
1/3 cup sugar
2/3 cup water
2 tablespoons fresh lemon juice, plus more to taste
8 2/3-inch slices stale coarse country-style bread, crust removed
2 tablespoons unsalted butter, melted
Confectioners' sugar

Steps:

  • Place the cherries in a nonreactive saucepan and sprinkle with the sugar. Let stand for 30 minutes, stirring often. Stir in the water, place over medium-high heat and bring to a boil. Reduce heat and simmer gently for 10 to 15 minutes. Remove from heat and let cool.
  • Stir in lemon juice. Refrigerate until cold.
  • Preheat broiler. Lightly butter a 9-inch nonreactive skillet, preferably one that would be attractive to serve from. Brush 1 side of each bread slice with butter and place, buttered side up, in the skillet, slightly overlapping, in 1 layer. Set under broiler to lightly toast the bread. Cool completely.
  • Strain the cherries, reserving the juice. Ladle the cherry juice over the bread and make sure that all of the bread is completely saturated with juice. Scatter the cherries over the top. Place the skillet over medium heat and bring the juices to a boil. Cover with foil and cook for 5 minutes. Remove from heat and let the pudding cool to room temperature in the pan. Sprinkle the top with confectioners' sugar and serve.

Tips:

  • Quality Ingredients: Use fresh, high-quality ingredients for the best flavor and texture. Fresh tart cherries are ideal for this recipe, but frozen or canned cherries can also be used if fresh ones are unavailable.
  • Pitting Cherries: If using fresh cherries, pit them before adding them to the bread pudding mixture. A cherry pitter can make this task easier and faster.
  • Stale Bread: Use slightly stale bread for the bread pudding. This will help it absorb the custard mixture more evenly and prevent it from becoming soggy.
  • Soaking the Bread: Soaking the bread cubes in the custard mixture for at least 30 minutes allows them to absorb the flavors and become tender.
  • Baking Time: Bake the bread pudding until the center is set and a toothpick inserted into the center comes out clean. The baking time may vary depending on the size of your baking dish and oven.
  • Serving: Serve the bread pudding warm or at room temperature. Top with fresh whipped cream, ice cream, or a sprinkle of powdered sugar for an extra special treat.
