8 ounces lean ground beef or 8 ounces lean ground chicken
2 cups cabbage, coarsely chopped
1/2 cup onion, chopped
2/3 cup long grain rice, raw
1 (28 ounce) can tomatoes, chopped fine, with juice
2 teaspoons prepared mustard
2 tablespoons brown Sugar Twin or 3 tablespoons brown sugar
1 dash salt
1 dash lemon pepper

Steps:

  • Brown meat in a skillet with cooking spray.
  • Spray and 8 by 8 dish with cooking spray.
  • Layer cabbage on bottom of dish.
  • Cover with onion, brown meat and rice.
  • Combine tomatoes, mustard, brown sugar twin and salt and lemon pepper.
  • Pour over mixture in the dish.
  • Cover and bake at 350 degrees Fahrenheit for 1-1/2 hours.
  • Uncover and bake additional 10 minutes.

I started making a version of this casserole years ago because I love cabbage rolls and they take so long to prepare. I've adjusted the recipe many times but this is my current version. I have also noted lots of other recipes like this in the past couple of years so I guess it wasn't that big a leap from cabbage rolls to cabbage...

1 lb lean ground beef
1 lb bulk pork sausage
2 clove garlic, minced
1 c onions, diced
1 can(s) diced tomatoes (about 15 ounces)
1/2 tsp salt
1/2 tsp pepper
pinch of red pepper flakes
1/2 tsp thyme
3 c cooked rice
6 slice bacon, fried and crumbled
2 lb shredded cabbage (cole slaw mix)
2 c mozzarella cheese, shredded
1 can(s) tomato sauce (about 15 ounces)

Steps:

  • 1. In a large skillet stir and brown beef, pork, garlic, and onion until meat is crumbled and no longer pink. Drain grease. Stir in diced tomatoes and seasonings. Bring mixture to a boil. Reduce heat and simmer to blend flavors and reduce juice a bit for about 10-12 minutes. Stir in rice and bacon and heat thoroughly. Remove from heat.
  • 2. Preheat oven to 375 degrees. Layer 1/3 of cole slaw mix in bottom of a 9 by 13 inch baking pan. Put 1/2 of meat mixture on top of that layer. Next add another 1/3 of cole slaw mix. Now add remaining meat mixture and then top that with remaining cole slaw mix. Pour tomato sauce over top of casserole. Cover and bake for 50 minutes.
  • 3. Uncover casserole and sprinkle cheese on top. Return to oven for 10-12 minutes to melt cheese. Allow to sit for 10 minutes before serving.

3/4 c chopped, onion
1 clove garlic, minced
1 1/2 c low sodium, reduced fat chicken broth
3/4 c uncooked long grain rice
1 medium head cabbage, about 3-4 lbs
1 1/2 c lean grd turkey
1 egg white
1/4 c chopped fresh parsley
1 tsp marjoram, dried
1/2 tsp each salt and black pepper
2 can(s) low fat condensed tomato soup

Steps:

  • 1. Spray a medium saucepan with non stick spray. Add onions and garlic. Cook over medium heat for 2 mins., stirring often. Add broth and rice. Bring to a boil. Reduce heat to medium-low. Cover and cook for 20-25 minutes, until rice is tender and liquid has been absorbed. Stir occasionally.
  • 2. Meanwhile, bring a large pot of water to a boil. Cut cabbage into 8 wedges for 5 minutes. Drain. Remove tough inner pieces. Seperate individual leaves and set aside.
  • 3. Combine cooked rice with turkey, egg white, parsley, marjoram, salt, and pepper. Mix well, (using your hands works best).
  • 4. Spray a 13x9" baking pan with non-stick spray. Line bottom with 1/2 the cabbage leaves. Spread rice/turkey mixture evenly over the cabbage. Top with remaining cabbage leaves.
  • 5. Empty both cans of soup into a medium bowl. Add 1 can water and mix well. Pour soup evenly over cabbage. Cover and bake for 1 hour at 350. Reduce heat to 325 and cook another 45 minutes. Let cool for 5 minutes before serving.
