Time 35m

Yield 3 1/4 cups

Number Of Ingredients 6

3 1/4 cups whole almonds
1 1/2 cups sugar
3 tablespoons cinnamon
1 egg white
1 1/2 teaspoons vanilla
1/8 teaspoon salt

Steps:

  • Preheat oven to 300 degrees.
  • Line a baking sheet with foil and lightly spray with vegetable oil.
  • In a large bowl combine sugar and cinnamon.
  • In another large bowl beat egg white until slightly frothy. Stir in vanilla and salt.
  • Add almonds to egg mixture and toss to coat.
  • Then pour almonds into cinnamon sugar mixture and toss to coat.
  • Spread sugar coated almonds on lined baking sheet.
  • Bake 25 minutes; stir after 10 minutes.
  • Let cool and remove from pan with slotted spoon.

Tips:

  • For the best results, use a heavy-bottomed saucepan to prevent the sugar from burning.
  • Use a candy thermometer to ensure that the sugar syrup reaches the correct temperature (300°F/150°C).
  • If you don't have a candy thermometer, you can do a "soft ball test". Drop a small amount of the sugar syrup into a glass of cold water. If it forms a soft ball that can be easily molded with your fingers, it is ready.
  • Stir the sugar syrup constantly to prevent it from crystallizing.
  • If the sugar syrup starts to crystallize, remove it from the heat and stir in a few drops of lemon juice or vinegar. This will help to dissolve the crystals.
  • Once the sugar syrup is ready, remove it from the heat and stir in the almonds. Make sure to coat the almonds evenly.
  • Spread the sugared almonds on a parchment paper-lined baking sheet and let them cool completely.
  • Once the sugared almonds are cool, store them in an airtight container at room temperature.

Conclusion:

Vanilla sugared almonds are a delicious and easy-to-make snack or gift. With just a few simple ingredients, you can create a sweet and crunchy treat that is sure to please everyone.
