½ cup canola oil, or vegetable oil
½ cup vegan buttermilk, mix 1/2 cup of non-dairy milk, such as almond or soy, and 1/2 tsp of apple cider vinegar and rest for 10 minutes
½ cup brown sugar
¼ cup granulated sugar
2 vegan eggs, I used Bob's Red Mill Egg Replacer but you can use flax eggs or any egg replacer of your preference

Tips:

  • Use ripe apples: They'll be sweeter and have a better flavor.
  • Don't overmix the batter: This will make the muffins tough.
  • Fill the muffin cups only about 2/3 full: They'll rise as they bake.
  • Bake the muffins until a toothpick inserted into the center comes out clean: This usually takes about 20-25 minutes.
  • Let the muffins cool for a few minutes before serving: This will help them hold their shape.
