1 teaspoon flax seed
1/2 cup soymilk

  • Grind flax seeds in a blender until they become a fine powder, then add the soy milk and blend for about 30 seconds more and set aside.

  • Cream the sugar and oil in a separate large bowl.
  • Add the flax/soy milk mixture and mix well.

  • Roll dough into 1" balls and flatten into disks about 1 1/2" in diameter.
  • Place on an ungreased cookie sheet about 1" apart and bake for 10 minutes.

Time 40m

Yield 16 Cookies, 16 serving(s)

Number Of Ingredients 10

1/2 cup sugar
1/2 cup brown sugar
1/3 cup margarine (room temp)
1/3 cup shortening
1/4 cup extra-firm silken tofu (mori nu)
1 teaspoon vanilla
1 1/2 cups flour
1/2 teaspoon baking soda
1/2 teaspoon salt
chocolate chips

Steps:

  • Preheat oven to 350.
  • Cream the sugars, shortening and margarine for 5 minutes.
  • Puree tofu and vanilla in blender or processor until smooth.
  • Add pureed tofu to the cream mixture and mix well.
  • In separate bowl, SIFT flour, baking soda and salt.
  • Add flour mixture to creamed mixture and mix until flour just disappears.
  • Add chocolate chips.
  • Make cookie dough balls (this recipe should make 16) and flatten them slightly onto an ungreased cookie sheet.
  • Bake at 350 for around 9 and 1/2 minutes.

Tips:

  • Use ripe bananas: The riper the bananas, the sweeter and more flavorful your cookies will be.
  • Don't overmix the dough: Overmixing will make the cookies tough. Mix just until the ingredients are combined.
  • Chill the dough before baking: Chilling the dough will help the cookies hold their shape and prevent them from spreading too much.
  • Bake the cookies at a high temperature: This will help the cookies get crispy on the outside and chewy on the inside.
  • Don't overbake the cookies: Overbaking will make the cookies dry and crumbly. Bake just until the edges are golden brown.

Conclusion:

These vegan chewy chocolate chip cookies are the perfect treat for any occasion. They're easy to make, delicious, and packed with chocolate chips. Plus, they're vegan, so everyone can enjoy them. So next time you're looking for a sweet snack, give these cookies a try. You won't be disappointed!
