VEGETARIAN "MEAT" SAUCE RECIPE BY TASTY

Vegetarian

Here's what you need: cremini mushroom, white onion, oil, salt, pepper, garlic, dried oregano, tomato paste, crushed tomato, vegetable broth, chickpeas, fresh basil

Provided by Joey Firoben

Categories     Dinner

Yield 8 servings

Number Of Ingredients 12

10 oz cremini mushroom
1 white onion
2 tablespoons oil
salt, to taste
pepper, to taste
4 cloves garlic, minced
1 ½ teaspoons dried oregano
¼ cup tomato paste
28 oz crushed tomato, 1 can
2 cups vegetable broth
15 oz chickpeas, 1 can, drained
fresh basil, for garnish

Steps:

  • In a food processor, pulse the mushrooms and onions until broken into uniformly fine pieces, about 10 pulses, scraping down the sides of the bowl as needed.
  • Heat the oil in a large skillet set over medium-high heat.
  • Pour the mushrooms and onions into the skillet and season with salt and pepper. Sauté until the veggies have released moisture and softened, about 8 minutes.
  • Add the garlic and oregano. Sauté until fragrant, about 30 seconds.
  • Push the veggies to the sides of the pan and add the tomato paste, slowly mixing in the veggies from the side until a uniform paste has formed.
  • Add the crushed tomatoes and stir until well combined and thick.
  • Add the vegetable stock and stir until the sauce has thickened slightly. Reduce the heat to medium-low if it is bubbling and popping too much.
  • While the sauce simmers, place the chickpeas in the food processor and pulse until broken into fine pieces, about 10 pulses.
  • Pour the chickpeas into a fine mesh strainer and submerge in a medium bowl filled with water.
  • Shake the strainer for 1 minute to remove starches from the chickpeas. You'll know when to remove the strainer when the water has become very cloudy from the starches.
  • Transfer the chickpeas to the sauce and stir for at least 1 minute to give the chickpeas time to cook.
  • Use the sauce as desired for pasta, veggie noodles, calzones, etc..
  • Enjoy!

VEGETARIAN " MEAT " SAUCE WITH VEGGIE ME

Vegetarian

My little one's been rebelling against eating meat, so I decided to indulge her with a Veggie Meat Sauce...and it came out wonderful! The seasonings in this sauce a very adjustable according to your tastes. My family tends to like their sauces on the sweet side. And the recipe makes plenty to freeze for next time! Could also be adapted for the crock pot.

CHEESE RAVIOLI WITH VEGETARIAN " MEAT" SAUCE

Cheese Ravioli With Vegetarian

I often use vegetarian crumbles as a replacement for recipes that call for ground beef. This is my attempt to mimic the meat sauce my mother's mother would make for her lasagna and ziti. This tomato sauce is really easy to put together, and can be used with ANY pasta. (I just happen to have a weakness for cheese ravioli!)

Provided by Kozmic Blues

Categories     < 30 Mins

Time 30m

Yield 6 serving(s)

Number Of Ingredients 11

1 tablespoon olive oil
1 small onion, chopped
2 garlic cloves, minced
1/2 teaspoon crushed red pepper flakes (to taste)
1 teaspoon dried basil
1 teaspoon dried oregano
2 cups vegetarian ground beef, frozen (2 pouches of the Boca brand)
salt and pepper
1 (26 ounce) jar tomato sauce & mushrooms
1 lb cheese ravioli
parmesan cheese, grated

Steps:

  • Cook ravioli in boiling salted water for 6-7 minutes.
  • In the meantime, heat olive oil over medium heat, and sauté onions and garlic and crushed red pepper until soft, about 5-6 minutes.
  • Add basil, oregano, and meatless crumbles and sauté another 5-6 minutes more. The crumbles should be thawed, and get a little color on them as they mix with the garlic and onions.
  • If the pan seems to get dry, add 1/4 cup of water so the crumbles don't stick.
  • Add salt and pepper to taste.
  • Finally, add the jar of tomato sauce and mix together.
  • Cover with a lid, and let simmer on low for another 10 minutes.
  • Toss sauce with cooked ravioli, and serve with grated cheese.

Tips:

  • Use a variety of vegetables: This will give your sauce a more complex flavor and texture. Some good options include carrots, celery, onions, bell peppers, and mushrooms.
  • Don't be afraid to experiment with different spices: Italian seasoning, oregano, basil, and garlic are all classic choices, but you can also try adding cumin, chili powder, or smoked paprika for a different flavor profile.
  • Simmer your sauce for at least 30 minutes: This will allow the flavors to meld and develop. If you're short on time, you can simmer it for a shorter amount of time, but the flavor won't be as good.
  • Add some acidity to your sauce: This will help to brighten the flavor and keep it from tasting flat. You can add acidity with lemon juice, vinegar, or tomatoes.
  • Garnish your sauce with fresh herbs: This will add a pop of color and flavor. Some good options include basil, parsley, or oregano.

Conclusion:

Vegetarian meat sauce is a delicious and versatile dish that can be used in a variety of ways. It's perfect for pasta, pizza, lasagna, or even as a dip. With a little creativity, you can create a vegetarian meat sauce that everyone will love. So next time you're looking for a hearty and flavorful meatless meal, give vegetarian meat sauce a try. You won't be disappointed!
