VENISON ( OR GROUND BEEF) & POTATO CASSEROLE

Venison ( or Ground Beef) & Potato Casserole image

This is a great comfort food. I use ground venison but you could use any ground meat. It melts in your mouth and is a fix it and forget it kind of recipe. You can do it in the crockpot or throw it in a 350°F oven for an hour or so and call it done. I got this recipe from the recipe book that came with one of my crock pots. Use whatever vegetables you like or just use the leftovers from the past few days, that's what I usually do.

Number Of Ingredients 10

1 (16 ounce) package mostaccioli or medium tube pasta
1 tablespoon olive oil
1 yellow onion, chopped
1 pound ground venison
1 (15 ounce) can tomato sauce
¼ teaspoon dried basil
⅛ teaspoon garlic powder
salt and pepper to taste
¼ cup grated Parmesan cheese
3 cups grated Mozzarella cheese

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Lightly grease a 9x13 inch baking dish.

SUCCULENT BRAISED VENISON

Succulent braised venison image

Venison benefits from long, slow cooking, and this Scottish dish develops a beautifully earthy sweetness - try it as an alternative to turkey, or for Hogmanay

Provided by Nick Nairn

Categories     Dinner, Main course

Time 2h5m

Number Of Ingredients 13

2 carrots, roughly chopped
140g turnip or swede, roughly chopped
2 onions, roughly chopped
3 celery sticks, roughly chopped
olive oil and butter, for frying
1 garlic clove, crushed
1kg boned leg or shoulder of venison, cut into large chunks (or buy ready-cubed venison for stewing)
5 tbsp plain flour, seasoned with salt and pepper
2 tbsp redcurrant jelly (or rowan or hawthorn jelly)
450ml dry red wine (Rioja is good)
450ml beef stock
2 thyme sprigs
1 bay leaf

Steps:

  • Heat oven to 180C/fan 160C/gas 4. Fry the vegetables in a little oil and butter in a heavy-based casserole for 4-5 mins until golden. Tip in the garlic and fry for a further min, then set aside.
  • Put the venison into a plastic bag with seasoned flour and shake to coat. Add a little more oil and butter to the pan, then fry the venison over a high heat, stirring now and then, until well browned. Don't crowd the pan - cook in batches if necessary. Set aside with the vegetables.
  • Add the redcurrant jelly and wine to the pan, and bring to the boil, scraping up all the bits that have stuck to the bottom. Pour in the stock, then add the thyme, bay leaf, meat and vegetables. Season if you like and bring to the boil. Cover and transfer to the oven for about 1½ hrs or until tender. Remove from the oven and check the seasoning.

Tips:

  • Choose high-quality venison or beef: Look for meat that is deep red in color and has a good amount of marbling. Avoid meat that is brown or gray, as this indicates that it is old or has been improperly stored.
  • Trim the meat of excess fat: This will help to reduce the amount of grease in the casserole.
  • Brown the meat before adding it to the casserole: This will help to develop the flavor and create a richer sauce.
  • Use a variety of vegetables in your casserole: This will add flavor, color, and nutrients to the dish. Some good options include carrots, celery, onions, potatoes, and mushrooms.
  • Use a flavorful liquid in your casserole: This could be broth, wine, or even beer. The liquid will help to braise the meat and vegetables and create a delicious sauce.
  • Season the casserole well: Use a combination of salt, pepper, and other herbs and spices to taste. You can also add a bay leaf or two for extra flavor.
  • Cook the casserole until the meat and vegetables are tender: This may take anywhere from 1 to 2 hours, depending on the type of meat and vegetables you are using.
  • Serve the casserole hot, garnished with fresh herbs: This will make your casserole even more delicious and inviting.

Conclusion:

Venison or beef casserole is a hearty and delicious meal that is perfect for a cold winter day. It is easy to make and can be tailored to your own taste preferences. With a little planning and effort, you can create a venison or beef casserole that your family and friends will love.
