- Heat butter in a 4 quart saucepan. Saute onion for about 5 minutes or until tender. Add the pumpkin and bring to a simmer until you are ready to eat. (Note that if the soup is too thin, you can soak the bread in some more broth and when tender, add it to the soup) Season to taste with salt and pepper and a very fine touch of ground mace. Right before serving, remove the hot soup from the heat and add the cheese. (For company you can whisk in some heavy cream before serving or top the soup with sour cream). Tips:
- Choose the right pumpkin: Look for sugar pumpkins or pie pumpkins, which are small and have a sweet, flavorful flesh. Avoid using carving pumpkins, as they are stringy and less flavorful.
- Roast the pumpkin before puréeing: Roasting the pumpkin intensifies its flavor and makes it easier to blend into a smooth purée. If you don't have time to roast the pumpkin, you can also steam or boil it until tender.
- Use a good quality broth: The broth is the base of the soup, so it's important to use a good quality one. If you're short on time, you can use store-bought broth, but homemade broth is always best.
- Add spices and herbs to taste: Pumpkin soup is a great opportunity to experiment with different spices and herbs. Some popular additions include cinnamon, nutmeg, ginger, cloves, and thyme.
- Garnish the soup before serving: A simple garnish can make a big difference in the presentation of the soup. Try sprinkling some chopped parsley, pumpkin seeds, or croutons on top.
Conclusion:
Pumpkin soup is a delicious and versatile dish that can be enjoyed all fall and winter long. With its sweet, savory, and creamy flavor, it's a surefire hit with people of all ages.
