4 egg yolks
150ml condensed milk
1 tsp vanilla extract
200ml strong espresso (approx 4 x double espressos)
dark chocolate , grated (optional)

Steps:

  • Put the egg yolks, condensed milk and vanilla extract in a large mixing bowl. Whisk with electric beaters for at least 5 mins or until pale and foamy.
  • Put 4 heatproof glasses or ramekins into slightly larger bowls that have been half-filled with boiling water (this will keep the coffee in the glasses hot for longer).
  • Pour the freshly brewed coffee into the glasses, reserving 2 tbsp, then top with scoops of the egg mixture. Drizzle the remaining coffee on top so that it stains the topping and sinks in. Scatter over a pinch of the grated dark chocolate, if you like. Serve immediately, with spoons.

Tips:

  • Eggs: Use fresh, cold eggs for a light and fluffy texture. Separate the egg yolks and whites to ensure a rich and creamy consistency.
  • Whisking: Whisk the egg yolks and sugar together for at least 5 minutes to create a thick and pale mixture. This will help to emulsify the sugar and prevent the eggs from curdling when combined with the hot coffee.
  • Coffee: Use a strong, dark roast coffee for a bold and flavorful taste. Brew the coffee according to the package instructions and let it cool slightly before pouring it over the egg yolk mixture.
  • Mixing: Slowly pour the hot coffee into the egg yolk mixture while whisking constantly. This will help to prevent the eggs from curdling. Continue whisking until the coffee and egg mixture is well combined.
  • Whipping: Whip the egg whites until stiff peaks form. This will add a light and airy texture to the egg coffee. Fold the whipped egg whites into the coffee and egg yolk mixture until just combined.
  • Serving: Top the egg coffee with a sprinkle of ground coffee or cocoa powder for a finishing touch. Serve immediately and enjoy.
