FLUFFY WAFFLES

A friend shared this fluffy waffle recipe with me a few years ago. The cinnamon cream syrup is a nice change from maple syrup, and it keeps quite well in the fridge. Our two children also like it on toast. -Amy Gilles, Ellsworth, Wisconsin

Categories     Breakfast

Time 55m

Yield 4-6 serving(s)

Number Of Ingredients 7

1 3/4 cups flour
2 tablespoons sugar
1 tablespoon baking powder
2 eggs
1 3/4 cups milk
1/2 cup oil
1 teaspoon vanilla

Steps:

  • 1. Combine dry ingredients in large bowl.
  • 2. In a separate bowl, beat wet ingredients and then add to dry, stirring just until moistened.
  • 3. Cook on pre-heated waffle iron until waffles are browned and test done. I like to set a timer so I don't have to keep checking, or risk forgetting to take the waffles out on time!

Tips:

- Use the right flour. Freshly ground flour has more nutrients and flavor than store-bought flour. It also absorbs more liquid, so you may need to adjust the amount of milk or water in your recipe. - Grind your flour just before using it. The longer flour is stored, the more its flavor and nutrients degrade. For the best results, grind your flour just before you start making your waffles. - Use a waffle maker that is specifically designed for freshly ground flour. These waffle makers have a higher heating capacity and can cook waffles more evenly. - Don't overmix the batter. Overmixing the batter can make the waffles tough. Mix the batter just until the ingredients are combined. - Let the batter rest for a few minutes before cooking. This will allow the flour to absorb the liquid and the gluten to develop. - Cook the waffles according to the manufacturer's instructions. The cooking time will vary depending on the type of waffle maker you are using. - Serve the waffles immediately with your favorite toppings. Waffles are best served hot and fresh.

Conclusion:

Making waffles from freshly ground flour is a great way to enjoy a delicious and nutritious breakfast. With a little planning and effort, you can make waffles that are light, fluffy, and packed with flavor. So next time you're in the mood for waffles, try making them from freshly ground flour. You won't be disappointed.
