APPLE PIE CAKE
In addition to being a cute, seasonal garnish for this cake, the leaf-shaped pie crust cutouts also serve to drive home the apple pie theme. The leaves provide just the right amount of buttery, flakiness to the cake. There is no mistaking that this is cake is based on classic American apple pie.

Steps:
- Make the cutouts: Preheat the oven to 425˚ F. Line a baking sheet with parchment paper. Stir together the granulated sugar and cinnamon. Unroll the pie dough and sprinkle the cinnamon sugar on top, pressing to adhere. Cut out about 20 leaf shapes using small cookie cutters. Arrange on the baking sheet and bake until golden, 8 to 10 minutes. Transfer to a rack and let cool.
- Make the cake: Reduce the oven temperature to 350˚ F; butter a 9-by-13-inch baking dish. Whisk the flour, cinnamon, baking powder, salt, nutmeg, allspice and baking soda in a medium bowl. Beat the butter and vegetable oil in a large bowl with a mixer on medium-high speed until combined. Beat in both sugars until light and fluffy, about 4 minutes. Beat in the eggs, one at a time, then the vanilla. Reduce the mixer speed to low and beat in the flour mixture in three batches, alternating with the buttermilk in two batches. Increase the speed to medium high and beat until combined. Fold in the diced apples.
- Transfer the batter to the baking dish and spread in an even layer. Bake until golden, slightly risen and a toothpick inserted into the center comes out clean, 35 to 45 minutes. Transfer to a rack and let cool completely in the pan.
- Make the frosting: Set a heatproof bowl over a saucepan with 2 inches of barely simmering water. Add the brown sugar, egg whites and cinnamon to the bowl; stir with a rubber spatula until the sugar melts, about 8 minutes. (Pinch the mixture; it should feel smooth.) Remove the bowl from the pan and beat with a mixer on low speed until frothy. As the mixture begins to lighten in color, increase the speed to medium high and whip until stiff glossy peaks form. Beat in the butter 2 tablespoons at a time, making sure it is incorporated before adding more. (If the frosting separates, reduce the mixer to medium low and beat until it comes back together. If the frosting is soupy, refrigerate for 15 to 20 minutes, then continue beating.)
- Spread the frosting on the cake. Decorate with the leaf cutouts.

DELICIOUS APPLE PIE CAKE
This is a fantastic recipe, and a great way to use up the apples that you may have on hand, or in this case, the can of apple pie filling. Either way, it's tasty. Turbinado sugar is sometimes used in place of brown sugar. It's also called "sugar in the raw" and can be found next to the granulated sugar. I think that this is much better served warm, and served with a piece of cheddar cheese. Or, some vanilla yougurt would be nice. Rather than heating the whole cake up, try heating individual pieces in the microwave.

Steps:
- Make the cake: Heat the oven to 350 degrees. Grease a 10-inch cake pan and place a silicone sheet or parchment paper on the bottom. (You can substitute a 10-inch spring-form pan, as long as it is tightly sealed at the bottom.)
- With a handheld or electric mixer, combine the oil, brown sugar, honey, eggs and vanilla in a large bowl.
- In a separate bowl, sift the flour, baking soda, salt and cinnamon. Add half the sifted dry ingredients to the liquid mixture, and mix on a low speed until combined.
- Add the grated apples and the remainder of the dry ingredients. Finish mixing by hand, and pour into the greased cake mold. Bake for 40 to 50 minutes, or until a toothpick inserted in the center comes out clean.
- Make the maple glaze: Stir maple syrup and confectioner's sugar over low heat in a small saucepan until combined. Then increase the heat and boil for 30 seconds. Set aside on the stove top, off the heat.
- To finish the cake, run a paring knife around the edge of the cake pan. Invert a serving dish on top of the cake and then flip the cake over onto the dish, carefully lifting away the cake pan. Re-warm the maple glaze, stir it and pour it over the warm cake. You may decorate the platter with peeled orange sections. The cake will stay moist overnight if covered with foil. It does not need to be refrigerated.
APPLE PIE CAKE-MIX CAKE
My mum taught me this recipe when I was just learning to bake, and I still use it for parties as it is a crowd-pleaser. Having only 3 ingredients it is super quick and easy to make. A dollop of vanilla ice cream tops it very well.

Tips:
- Use a variety of apples. This will give your pie a more complex flavor and texture. Some good choices include Granny Smith, Honeycrisp, and Braeburn apples.
- Peel and core your apples thinly. This will help them to cook evenly.
- Toss your apples with sugar, flour, and spices before adding them to the pie crust. This will help to thicken the filling and prevent it from being too runny.
- Dot the top of your pie crust with butter before baking. This will help to create a golden brown crust.
- Bake your pie at a high temperature for the first 15 minutes, then reduce the temperature and continue baking until the filling is bubbly and the crust is golden brown.
- Let your pie cool completely before serving. This will allow the filling to set and the flavors to meld.
