1 1 1/2-pound beef eye round roast
Kosher salt and freshly ground pepper
1 1/2 tablespoons vegetable oil
1 sprig rosemary
1 tablespoon plus 1 teaspoon Worcestershire sauce
2 russet potatoes (about 8 ounces each)
1 small shallot, finely chopped
1 tablespoon all-purpose flour
1/2 cup skim milk
1 10-ounce box frozen chopped spinach, thawed and squeezed dry
cup reduced-fat sour cream

Steps:

  • Preheat the oven to 425 degrees F. Pierce the beef all over with a fork; season with salt and pepper. Heat 1 tablespoon vegetable oil and the rosemary in a large nonstick ovenproof skillet over medium-high heat. Add the beef and cook, turning, until browned, 8 minutes. 4 walleye fillets
2 eggs, beaten
½ cup all-purpose flour
½ teaspoon garlic powder
1 pinch salt
½ teaspoon ground black pepper
2 cups crushed saltine crackers

1/3 cup olive oil

8 cups light chicken or chicken stock
1/4 cup black peppercorns
4 large shallots, sliced
3 bay leaves
2 medium onions, sliced
1 head garlic, washed and cut in half
1 bunch thyme
salt
4 cups unpopped popcorn
3 tablespoons canola oil
finely ground black pepper
4 (5 1/2 ounce) boneless fillets walleye
salt
1/2 cup instant flour, such as Wondra
1/4 cup canola oil
1/4 cup butter, plus more if needed
2 cups cremini mushrooms, halved
2 cups fingerling potatoes, poached and halved
10 ounces savoy spinach, washed and stemmed
fresh ground black pepper
1 lemon, juiced
2 tablespoons chopped fresh Italian parsley
1 pinch smoked paprika
