Categories     Fish

Yield 4 Servings

Number Of Ingredients 11

½ cup all purpose flour
3 Tbsp dried rubbed sage
1 Tbsp salt
1½ tsp ground black pepper
2 large eggs
2 cups finely chopped walnuts (about 10 oz)
2 9-to-10oz trout, boned, heads removed, butterflied, halved (4 fillets)
2 Tbsp (¼ stick) butter
2 Tbsp olive oil
1 lemon, quartered lengthwise
Chopped fresh parsley

Steps:

  • Using fork, stir flour, sage, salt, and pepper on large plate to blend. Place walnuts on large plate. Sprinkle trout fillets with salt and pepper. Dredge trout in flour mixture, then dip in eggs to coat. Press both sides of trout in walnuts to coat. Melt 1 Tbsp butter with 1 Tbsp oil in each of 2 heavy large skillets over medium heat. Add 2 trout fillets to each skillet. Cook until coating is lightly browned and trout are cooked through, about 5 minutes per side. Transfer trout to plates. Squeeze 1 lemon wedge over each fillet, sprinkle with parsley, and serve.

Tips:

  • Choose fresh trout fillets: Look for fillets that are firm and have a slightly translucent appearance. Avoid fillets that are slimy or have a strong fishy odor.
  • Use a sharp knife to remove the skin: If the trout fillets have skin, use a sharp knife to carefully remove it. This will help the walnut crust adhere better to the fish.
  • Crush the walnuts finely: Use a food processor or mortar and pestle to crush the walnuts into a fine crumb. This will help the crust adhere to the fish and provide a more even coating.
  • Use a light touch when coating the fish: Gently press the walnut crust onto the fish fillets. Do not press too hard, or the crust will fall off.
  • Cook the fish over medium heat: Cooking the fish over medium heat will help the walnut crust to brown evenly without burning the fish.
  • Do not overcrowd the pan: When cooking the fish, do not overcrowd the pan. This will prevent the fish from cooking evenly.
  • Serve the fish immediately: Once the fish is cooked, serve it immediately. This will help to ensure that the fish is hot and crispy.

Conclusion:

Walnut-crusted trout fillets are a delicious and elegant dish that is perfect for a special occasion. The trout fillets are coated in a crispy walnut crust and then pan-fried until golden brown. The result is a fish dish that is both flavorful and healthy. Serve the walnut-crusted trout fillets with your favorite sides, such as roasted vegetables, mashed potatoes, or rice.
