1 cup water
1 cup sugar

2 teaspoons lemon juice
DOUGH:
1 cup butter, softened
1 cup packed brown sugar
1 cup sugar
3 large eggs, room temperature
1 teaspoon lemon extract
4 cups all-purpose flour
1 teaspoon salt
3/4 teaspoon baking soda

Steps:

  • In a saucepan, combine filling ingredients. Cook over medium-low heat, stirring constantly, until mixture becomes stiff, 15-20 minutes. Chill. , For dough, cream butter and sugars in a bowl. 3/4 cup pitted diced dates
6 tablespoons sugar
6 tablespoons water
2 teaspoons lemon juice
1/2 teaspoon grated fresh lemon rind
1/2 cup finely chopped or ground walnuts
1 egg
2 cups sifted flour
1/4 teaspoon baking soda
1/4 teaspoon salt
2/3 cup butter, softened
1 1/4 cups packed brown sugar
1 1/2 teaspoons grated orange rind
1 tablespoon vinegar

Steps:

  • Combine dates, sugar and water in saucepan.
  • Cook until thickened and dates have broken down to a paste about 5 minutes, stirring constantly (add water a tsp at a time if you feel it is sticking).
  • Remove from heat and blend in lemon juice, lemon rind and the nuts.
  • Set aside to cool thoroughly.
  • Sift together flour, baking soda and salt.
  • Cream the butter, brown sugar and orange rind.

  • Bake in 375F oven for 12 minutes until slightly golden (do not brown).
  • Remove from oven and let sit on cookie sheet for 2 minutes before removing and cooling on rack.

1 cup finely chopped pecans
½ cup water

Steps:

  • Cream the butter and brown sugar together in a mixing bowl until smooth. Add the eggs, one at a time, beating well after each addition. Stir in the vanilla. 1 ½ cups pitted dates
¼ cup white sugar
1 pinch salt
1 ¼ cups water
1 teaspoon lemon zest
4 teaspoons lemon juice
⅔ cup finely chopped walnuts
3 ½ cups all-purpose flour

¼ teaspoon baking soda
¾ teaspoon salt
¾ cup butter
½ cup white sugar
1 cup packed brown sugar
2 eggs

Steps:

  • Chop pitted dates in food chopper. Place dates into small saucepan and add 1/4 cup sugar, dash of salt, and 1 1/4 cups of water. Cook, stirring constantly until mixture is of a soft consistency. Remove from heat.
  • Add grated lemon rind, lemon juice, and chopped nuts. Mix well and chill.

Ms. Miller wrote that the original recipe called for two pounds of walnuts, but that she prefers it with pecans "and not that many." That makes sense. Mixing in even a pound of nuts requires the arms of a sturdy farm wife. The recipe yields enough for an entire church supper.

2 1/2 cups/350 grams all-purpose flour
1 teaspoon/5 grams salt
1 teaspoon/3 grams cinnamon
1/2 teaspoon/1 1/2 grams ground cloves
8 ounces/2 sticks/227 grams soft unsalted butter
1 1/2 cups/300 grams light brown sugar
3 large eggs, lightly beaten
1 tablespoon/13 grams baking soda
1 pound/450 grams chopped pitted dates
1 pound/450 grams chopped walnuts or pecans
Confectioners' sugar

Steps:

  • Heat oven to 350 degrees. Line one or more baking sheets with parchment. Place flour in a bowl and whisk in the salt, cinnamon and cloves. Set aside.
  • Cream butter and brown sugar together by hand or in an electric mixer. Beat in eggs. The mixture will not be smooth. Dissolve the baking soda in 1 tablespoon hot water and stir it in. 1 cup water

Steps:

  • In a large bowl, cream butter and sugars until light and fluffy, 5-7 minutes. Beat in eggs. In another bowl, whisk flour and baking soda; gradually beat into creamed mixture. Divide dough into 3 portions; shape each into a disk. Cover and refrigerate 1 hour or until firm enough to roll., For filling, place dates, water and sugar in a large saucepan. Bring to a boil.
