Steps:
- Drain and chop artichoke hearts.
- Combine artichoke hearts with remaining ingredients. Use as much or little of the jalapenos as you can handle. (When I make this for my family, I use an entire can, but when I make it for guests, I usually only use half of the can.).
- Pour into baking dish.
- Sprinkle with grated Parmesan cheese and paprika.
- Bake at 400 degrees until bubbles around edges.
- Serve with tortilla chips, crackers, as a sandwich spread, etc.
- NOTE: Depending on preference, you can do a rough chop on the artichokes for a chunkier dip, or you can put all the ingredients (except for the cheese) in a blender to puree for a smoother dip.

WARM ARTICHOKE DIP WITH SCALLIONS AND JALAPENOS
There are so many versions of hot artichoke dip. But using cream cheese for part of the mayo makes this one different. Serve it with crisp raw veggies, pita chips or baguette slices or maybe melba toast or crackers.

Steps:
- Preheat oven to 400.
- In food processor, mix scallions, pickled jalapeno, garlic and salt. Pulse until scallions are finely chopped.
- Add cream cheese, all but 1 T. of the Parmesan cheese, the mayonnaise, lemon juice, and cayenne. Puree until smooth.
- Add the artichokes and pulse until coarsely chopped. Scrape mixture into a 2 cup gratin or other shallow ovenproof baking dish. Sprinkle reserved 1 T. Parmesan cheese over the top.
- At this point, the dip can be covered with plastic wrap and refrigerated for up to 24 hours before baking. Shortly before serving, bake for about 20 minutes until dip is lightly browned on top and bubbly hot. Let cool slightly before serving. Great Party Dip
Tips:
- Fresh Ingredients: For the best flavor, use fresh artichokes, scallions, and jalapenos. If fresh artichokes are unavailable, you can use canned or frozen artichoke hearts, but be sure to drain and rinse them well before using.
- Don't Overcook the Artichokes: Artichokes should be cooked until tender but still slightly firm. Overcooking will make them mushy.
- Use a Good Quality Cheese: The type of cheese you use will greatly affect the flavor of the dip. We recommend using a sharp cheddar cheese or a combination of cheddar and Parmesan.
- Add Some Heat: If you like spicy food, add a minced jalapeno or two to the dip. You can also add a pinch of cayenne pepper for a more subtle heat.
- Serve Warm: Artichoke dip is best served warm and bubbly. You can keep it warm in a slow cooker or in a fondue pot.
Conclusion:
Warm artichoke dip with scallions and jalapenos is a delicious and easy-to-make appetizer that is perfect for any occasion. With its creamy texture, cheesy flavor, and subtle heat, this dip is sure to be a crowd-pleaser. Serve it with your favorite crackers, bread, or vegetables for a satisfying snack or meal.
