People kept asking me for this recipe, and their friends kept asking them for the recipe after they made it for them, so I figured it was a good one to put on here! There are many, many different ways to make this more healthy, let me know how you do it! I usually get the low sodium soups, use smart balance mayo, 2% cheddar cheese, whole wheat bread on top, and smart balance butter. Every little bit helps! I haven't ever measured this, so don't be afraid to add more or less of anything at your discretion! Especially with the curry, some nights I get sassy and decide to put tons of curry in it. Oh! and one last thing- it tastes EXCELLENT the next day, and serving it over rice is tasty and makes it last longer!

2 lbs chicken breasts, cooked and cut into bite sized pieces
1 (15 ounce) can cream of mushroom soup
1 (15 ounce) can cream of chicken soup
1 cup mayonnaise
1 teaspoon lime juice
1 teaspoon red curry paste (or to taste)
2 1/2 cups fresh broccoli
1 (8 ounce) bag of shredded cheddar cheese
2 slices bread, crumbled
1/3 cup melted butter (you may need more to thoroughly soak the bread crumbs)

8 bone-in chicken thighs, skin pulled off and discarded
1 tbsp oil
5 spring onions, sliced
2 tbsp plain flour
2 chicken stock cubes
2 large carrots, cut into batons (no need to peel)
400g new potato, halved if large
200g frozen peas
1 tbsp grainy mustard
small handful fresh soft herbs, like parsley, chives, dill or tarragon, chopped

Steps:

  • Put the kettle on. Fry 8 bone-in chicken thighs in 1 tbsp oil in a casserole dish or wide pan with a lid to quickly brown.
  • Stir in the whites of 5 spring onions with 2 tbsp plain flour and 2 chicken stock cubes until the flour disappears, then gradually stir in 750ml hot water from the kettle.
  • Throw in 2 large carrots, in batons and 400g new potatoes, bring to a simmer. Cover and cook for 20 mins.
  • Take off the lid and simmer for 15 mins more, then throw in 200g peas for another 5 mins.
  • Season, stir in 1 tbsp grainy mustard, the green spring onion bits, a small handful of fresh soft herbs and some seasoning.

I got this recipe from Emeril Lagasse but have modified it some. We love this. The original recipe called for 1 pound of ground beef and one pound of stew meat and 4 cups of fresh tomatoes.

1 tablespoon olive oil
2 cups chopped onions
2 lbs ground beef
1 tablespoon chopped garlic
2 tablespoons chili powder
2 teaspoons cumin
salt and pepper
1/4 cup tomato paste
2 (15 ounce) cans diced tomatoes
3 cups beef stock
10 flour tortillas
2 cups grated medium cheddar
2 cups grated monterey jack cheese

Steps:

  • Preheat the oven to 375°F
  • Grease a 9 by 9 by 2-inch square baking dish.
  • In a large skillet, heat the oil. When the oil is hot, add the onions and sauté for 3 to 4 minutes.
  • Add the ground beef and continue to cook for 3 to 4 minutes, stirring constantly.
  • Stir in the garlic, chili powder, and cumin. Season with salt and pepper. Stir in the tomato paste. Stir in the tomatoes and stock. Simmer the mixture for 30 minutes, stirring occasionally.
  • Remove from the heat and cool.
  • Spoon a couple of tablespoons of the chili mixture on the bottom of the prepared pan.
  • Lay two tortillas on top of the chili mixture. Sprinkle the top of the tortillas with the Cheddar and Jack cheese. Repeat the layering process until all of the chili, tortillas and cheese are used. (The final layer should be cheese)
  • Place the pan in the oven and bake until the cheese has melted, about 10 to 12 minutes. Remove from the oven and cool slightly before slicing.
