Tips:

  • Prep Work: Before you start cooking, make sure to wash and chop all of the vegetables. This will save you time and ensure that everything cooks evenly.
  • Choose Firm Vegetables: When selecting vegetables for your salad, opt for firm varieties that will hold their shape during cooking. This includes potatoes, carrots, and broccoli.
  • Use Fresh Herbs: Fresh herbs, such as parsley, dill, and chives, add a burst of flavor to the salad. If you don't have fresh herbs on hand, you can use dried herbs, but be sure to use half the amount.
  • Don't Overcook the Vegetables: Overcooked vegetables will lose their texture and flavor. Cook them just until they are tender-crisp.
  • Use a Good Quality Olive Oil: The olive oil you use will make a big difference in the flavor of the salad. Choose a high-quality extra virgin olive oil.
  • Season to Taste: Taste the salad before serving and adjust the seasonings accordingly. You may need to add more salt, pepper, or lemon juice.
