Yield Makes 8 servings

Number Of Ingredients 7

14 ounces good-quality milk chocolate (such as Lindt or Ghirardelli), chopped
3/4 cup (1 1/2 sticks) chilled unsalted butter, cut into small cubes
6 large egg yolks
2 large eggs
1/3 cup sugar
Powdered sugar (for dusting)
Vanilla ice cream

Steps:

  • Position rack in center of oven and preheat to 350°F. Butter eight 3/4-cup soufflé dishes. Coat soufflé dishes with sugar. Arrange soufflé dishes on heavy large baking sheet. Stir milk chocolate and butter in medium metal bowl set over saucepan of simmering water until chocolate mixture is melted and smooth (do not allow bottom of bowl to touch water). Cool chocolate mixture to lukewarm.
  • Using electric mixer, beat egg yolks, whole eggs, and sugar in large bowl until pale, thick, and tripled in volume, about 6 minutes. Fold 1/3 of egg mixture into lukewarm chocolate mixture to lighten. Gently fold chocolate mixture into remaining egg mixture. Spoon into prepared dishes, dividing equally. Smooth tops.
  • Bake until soufflés rise and edges are crisp and dark brown but centers are still soft, about 25 minutes. Dust tops with powdered sugar. Transfer to plates. Serve immediately, passing ice cream separately.

WARM VANILLA MILK

Yield 2 mugs

Number Of Ingredients 5

4 cups whole milk
4 tablespoons sugar
2 teaspoons vanilla extract
1/2 teaspoon cinnamon
1/2 teaspoon nutmeg

Steps:

  • Pour milk into a small saucepan over medium heat. Add sugar and vanilla and stir, then add the cinnamon and nutmeg. Bring to desired temperature, stirring occasionally, then pour into mugs and serve warm.

Tips:

  • Use fresh vanilla beans: Fresh vanilla beans provide a more intense and flavorful vanilla taste than vanilla extract or powder. If you don't have fresh vanilla beans, you can use 1 teaspoon of vanilla extract or 1/2 teaspoon of vanilla powder.
  • Use whole milk: Whole milk will produce a richer and creamier vanilla milk than skim or low-fat milk. If you are using low-fat or skim milk, you may want to add a little bit of butter or olive oil to the milk to give it a richer flavor.
  • Sweeten to taste: The amount of sugar you add to your vanilla milk is a matter of personal preference. Start with a small amount and add more to taste.
  • Use a variety of spices: In addition to vanilla, you can also add other spices to your vanilla milk, such as cinnamon, nutmeg, or cardamom. This will give your milk a more complex and flavorful taste.
  • Serve warm or cold: Vanilla milk can be served warm or cold, depending on your preference. If you are serving it warm, heat it gently over low heat until it is just warm to the touch. If you are serving it cold, chill it in the refrigerator for at least 2 hours.

Conclusion:

Warm vanilla milk is a delicious and comforting drink that can be enjoyed by people of all ages. It is a great way to relax and unwind at the end of a long day or to warm up on a cold winter night. With just a few simple ingredients, you can make your own warm vanilla milk at home in just a few minutes. So next time you are looking for a warm and comforting drink, give warm vanilla milk a try.
