1/2 cup extra-virgin olive oil
3 4×1-inch strips orange zest
1-1/2 tsp. finely chopped garlic
1/4 tsp. crushed red pepper flakes
2 cups mixed unpitted olives
1 Tbs. Pernod (optional)
Crusty bread

Steps:

  • Using a mortar and pestle, lightly crush the coriander seeds. Transfer to a 1-quart saucepan and cook over medium heat, stirring, until fragrant and lightly browned, about 1 minute. Stir in the olive oil, orange zest, garlic, and red pepper flakes. Cook, stirring often, until the garlic is fragrant but not browned, about 1 minute after the oil begins to sizzle. Add the olives and Pernod, if using. Warm the olives through, stirring often, about 1 minute. Strain the oil into a small serving bowl. Transfer the olives to another serving bowl. 2 cups large green olives with pits, such as Cerignola (11 ounces)
2 cups large black olives with pits, such as Kalamata (11 ounces)
Zest of 1 orange, peeled in large strips
4 large garlic cloves, smashed
2 teaspoons whole fennel seeds
2 teaspoons chopped fresh thyme leaves
3/4 teaspoon crushed red pepper flakes
Kosher salt and freshly ground black pepper
2/3 cup good olive oil
4 sprigs fresh thyme

Steps:

  • Drain the green and black olives from the brine or oil that they're packed in and place them in a medium bowl. Add the orange zest, garlic, fennel seeds, thyme leaves, red pepper flakes, 1/2 teaspoon salt and 1/2 teaspoon black pepper. Pour the olive oil over the mixture, add the thyme sprigs and toss to combine.
  • Transfer the mixture, including the olive oil, to a medium (10-inch) sauté pan. Heat over medium heat until the oil begins to sizzle. 1/2 tangerine, sliced and cut into quarters
4 strips lemon zest
1 cup extra-virgin olive oil
3 large sprigs thyme
2 large sprigs oregano
1 bay leaf
1 clove garlic, smashed
1/2 teaspoon red pepper flakes

Steps:

  • Bring a pot of water to a boil over medium-high heat. Blanch the olives for about 30 seconds. Using a slotted spoon or spider, remove the olives to a medium bowl. Toss with the tangerine pieces and lemon zest.
  • In a small skillet, combine the olive oil, thyme, oregano, bay leaf, garlic and red pepper flakes. Warm gently over medium heat until small bubbles form around the herbs and garlic. Reduce the heat to medium low and simmer gently until the garlic is beginning to brown and the bubbles start to subside, about 7 minutes.
