ROQUEFORT PEAR SALAD
This is the best salad I've ever eaten and I make it all the time. It is tangy from the blue cheese, fruity from the pears, and crunchy from the caramelized pecans. The mustard vinaigrette pulls it all together.

ENDIVE, PEAR AND ROQUEFORT SALAD
This is a wonderful recipe by Ina Garten / The Barefoot Contessa. It is from her book "Barefoot in Paris". We paid $9.95 each for a lesser endive salad a few nights ago, so I vowed to find one to make at home and boy, did we love this!! I couldn't wait to share, and hope you like it! (Please note: this recipe has one raw egg yolk...)

WATERCRESS ENDIVE SALAD WITH ROASTED PEARS AND ROQUEFORT
This is a wonderful easy to assemble salad which looks stunning on a buffet table. The pears can be roasted 1 day ahead of time if stored in an air tight container in the refrigerator. If desired, replace part of the olive oil in the dressing with walnut oil. Do not substitute red wine for the port. You need the robust port flavour here.

Tips:
- Choose fresh, crisp ingredients. Watercress, endive, pears, and Roquefort cheese should all be at their peak of ripeness for the best flavor.
- Wash your produce thoroughly. This will remove any dirt or debris that may be clinging to the leaves or fruit.
- Use a sharp knife to cut your ingredients. This will help to prevent them from bruising and will also make for a more attractive salad.
- Don't overdress the salad. A light vinaigrette is all that is needed to enhance the flavors of the ingredients.
- Serve the salad immediately after it is made. This will prevent the leaves from wilting and the pears from browning.
Conclusion:
This watercress and endive salad with pears and Roquefort cheese is a delicious and refreshing dish that is perfect for a light lunch or dinner. The combination of flavors and textures is絶妙, and the salad is sure to impress your guests. So next time you're looking for a new salad recipe, give this one a try. You won't be disappointed!
