WATERMELON, RED ONION, AND WATERCRESS SALAD

Watermelon, Red Onion, and Watercress Salad image

The peppery taste of the watercress makes a great balance with the watermelon. Add the onions and the pine nuts and it tastes even better by giving it an added dimension. I enjoyed this salad recently and thought I'd share it here. The best thing about this salad is that the watermelon fills you up and you don't feel hungry after. I'll be making this often especially now (June) and through late August when watermelons are at their best and available without breaking the bank.

Yield Makes 4 servings

Number Of Ingredients 8

3 tablespoons fresh lime juice
1 teaspoon sugar
1 teaspoon minced peeled fresh ginger
1/4 cup vegetable oil
2 large bunches watercress (about 10 ounces total), tough ends trimmed, sprigs torn in half
2 1/2 cups 1/2-inch pieces watermelon
2 1/2 cups 1/2-inch pieces cantaloupe
1/3 cup sliced almonds, toasted

Steps:

  • Whisk lime juice, sugar, and ginger in large bowl to blend. Gradually whisk in oil. Season dressing with salt and pepper. Add watercress, watermelon, and cantaloupe to dressing and toss to coat. Transfer salad to plates. Sprinkle with sliced almonds and serve immediately.

Tips:

  • Choose ripe, flavorful watermelon: Look for a watermelon that is heavy for its size and has a deep, resonant sound when you tap it. The flesh should be deep red and juicy.
  • Use fresh, peppery watercress: Watercress is a delicate herb with a slightly peppery flavor. Look for watercress that is bright green and crisp.
  • Make the ginger dressing ahead of time: The ginger dressing can be made up to 3 days in advance. Simply whisk together the ingredients and store the dressing in a jar in the refrigerator.
  • Garnish the salad with fresh herbs: Fresh herbs such as cilantro, mint, or basil will add a pop of color and flavor to the salad.
  • Serve the salad immediately: Watermelon is best served fresh. Once the salad is dressed, it will start to wilt, so serve it immediately.

Conclusion:

Watermelon and watercress salad with ginger dressing is a refreshing, light, and flavorful salad that is perfect for a summer meal. The sweetness of the watermelon pairs perfectly with the peppery watercress and the tangy ginger dressing. This salad is also very easy to make, making it a great option for a quick and healthy lunch or dinner.
