Lemon ice
1/2 cup water

Push ice pop stick through slit and securely into watermelon ice without hitting bottom of cup. Freeze until watermelon ice is solid, about 1 hour longer.
  • For lemon ice:
  • Bring 1/2 cup water and sugar to boil in heavy small saucepan over medium-high heat, stirring until sugar dissolves. Remove from heat. Mix in lemon juice, orange juice, and vanilla. Cool to room temperature.

  • Place pan with frozen pops on work surface; carefully fold back foil over each cup without dislodging stick. Spoon blueberry mixture into cups, dividing equally (generous 3 tablespoons each). Reseal foil. Freeze until pops are frozen solid, about 8 hours. (Can be made 2 days ahead. Keep frozen.)
  • Remove foil, then tear or use scissors to cut cup off each pop; return ice pops to pan and freeze until ready to serve.

WATERMELON LEMONADE SLUSHIE

Watermelon Lemonade Slushie image

This slushie is as beautiful as it is refreshing. Fresh basil is the secret ingredient: We steep it in a simple syrup (equal parts sugar and water), then remove it before blending the slushie, so it adds a subtle herbaceous note.

Provided by Food Network Kitchen

Time 3h10m

Yield 4 servings

Number Of Ingredients 4

2 pounds cubed watermelon (about 4 cups)
1/2 cup sugar
1 large bunch basil, stems and leaves roughly chopped (about 2 cups), plus 4 whole leaves for garnish
Juice of 3 lemons (about 1/2 cup)

Steps:

  • Place the watermelon in a single layer on a rimmed baking sheet, and freeze until completely frozen, like ice cubes, about 2 hours.
  • Meanwhile, cook the sugar and 1/2 cup water in a small saucepan over medium heat, stirring occasionally, until the sugar is completely melted, about 5 minutes. Turn off the heat, add the chopped basil and stir until completely wilted. Cool completely at room temperature, at least 1 hour.
  • When the watermelon is completely frozen, put half in a blender. Strain the basil syrup into the blender, use the back of a wooden spoon or spatula to press down on the basil to extract as much flavor as possible, and discard the basil. Add the lemon juice, and blend until the mixture is mostly smooth, pushing it down with a wooden spoon or spatula if needed. Add the remaining watermelon, and continue to blend until the mixture is completely smooth.
  • Spoon the mixture into 4 short glasses (or wineglasses, if you want to be fancy), and garnish each with a basil leaf.

Number Of Ingredients 5

4 c fresh watermelon juice
3/4 c fresh lemon juice
3/4 c water
1/2 c sugar
6 thinly sliced fresh mint leaves

Steps:

  • 1. Make the lemon mint simple syrup. Combine water, sugar, mint leaves, and one of the halves of lemons in a small saucepan. Bring up to a boil and then simmer 3-5 min or until all the sugar is dissolved. Set aside for about an hour to cool. After cooled strain mint leaves out.
  • 2. I like my watermelon juice pulp-free. I use a seedless watermelon, cut in cubes. Puree in a food processor or blender. Pour through a fine sieve using the back of a large spoon to push on the pulp. Discard pulp and repeat the process until you have about 4 cups of watermelon juice.
  • 3. Juice lemons... it takes about 3-4 large lemons.
  • 4. Mix watermelon juice, lemon juice, and simple syrup mixture in a pitcher. Drop 5-6 large mint leaves in the pitcher for extra mint flavor. Mix well.
  • 5. Serve over ice garnished with a lemon slice and mint leaf.
  • 6. This can easily be made into an adult beverage by adding a shot of vodka to one serving. Store leftovers in the refrigerator. The mixture will separate but just remix it. Keeps well for several days.

REFRESHING WATERMELON LEMONADE

Refreshing Watermelon Lemonade image

Categories     Beverages

Time 10m

Yield 2 quarts, 6-8 serving(s)

Number Of Ingredients 4

1/2 cup sugar
1/2 cup lemon juice
2 cups watermelon
2 quarts water

Steps:

  • Puree the watermelon in a blender.
  • In a 2 quart pitcher, combine the sugar and the lemon juice. Stir well.
  • Stir in the pureed watermelon.
  • Stir in the water.
  • Adjust sweetness to taste. This is meant to be lightly sweet, so the flavor of the watermelon comes through.
  • Serve over ice.

Tips:

  • Choose ripe watermelon: The best watermelon lemonade is made with ripe, juicy watermelon. Look for a watermelon that is heavy for its size and has a deep red color.
  • Use fresh lemons: Fresh lemons will give your lemonade a brighter flavor than bottled lemon juice. If you don't have fresh lemons, you can use bottled lemon juice, but be sure to use a good quality brand.
  • Sweeten to taste: The amount of sugar or honey you add to your lemonade will depend on your personal preference. Start with a small amount and add more to taste.
  • Chill before serving: Watermelon lemonade is best served chilled. You can chill it in the refrigerator for at least an hour before serving, or you can freeze it for a slushy treat.
  • Garnish with fresh mint or watermelon slices: A garnish of fresh mint or watermelon slices will add a pop of color and flavor to your lemonade.

Conclusion:

Watermelon lemonade is a refreshing and delicious drink that is perfect for summer. It is easy to make and can be enjoyed by people of all ages. Whether you are looking for a healthy alternative to soda or a fun and festive drink to serve at your next party, watermelon lemonade is a great choice.
