This is one of my all time favorite muffin recipes! --- you can substitute one large finely chopped apple for the nuts, increase the spices if desired --- some of the butter can be replaced with more applesauce for a lower fat muffin :)

Number Of Ingredients 16

1 1/2 cups flour
1 1/2 teaspoons baking powder (heaping)
1/2 teaspoon baking soda
1 teaspoon cinnamon (can use more or less)
1/2 teaspoon allspice
1/4 teaspoon nutmeg
1/4 teaspoon salt
2 large eggs
1 cup light brown sugar (can use more)
1/2 cup butter (butter is better!) or 1/2 cup margarine, melted (butter is better!)
1 1/4 cups unsweetened applesauce
1 1/4 cups chopped nuts
6 -7 tablespoons sugar
1/2 teaspoon cinnamon
1/2 teaspoon allspice
1/2 teaspoon nutmeg

Steps:

  • Set oven to 350°F.
  • Set oven rack to second-lowest position.
  • Butter 12 muffin tins or line with paper liners.
  • For muffins: in a small bowl mix together first 7 dry ingredients.
  • In another large bowl whisk together eggs and brown sugar until well combined.
  • Add in melted butter whisking continuously until mixture is creamy.
  • Stir in applesauce.
  • Fold in flour mixture until JUST combined.
  • Stir in nuts.
  • Divide the batter evenly between muffin tins.
  • To make the topping: stir together all ingredients then sprinkle over tops of muffin batter.
  • Bake for about 20-22 minutes, or until muffins test done.
  • Cool in pan for 5 minutes then remove to a rack to cool.

1/2 cup whole wheat flour (I used whole wheat pastry flour)
3/4 cup all-purpose flour
1 cup Splenda sugar substitute
1 teaspoon sea salt (regular salt is also fine)
1 1/2 teaspoons baking soda
1 teaspoon pumpkin pie spice
1 teaspoon cinnamon (optional -- I really like cinnamon)
2 cups unsweetened applesauce
nonstick cooking spray

Steps:

  • Preheat Oven 350 degrees.
  • Spray muffin tins with nonstick spray.
  • Mix all dry ingredients to equally distribute.
  • Add applesauce.
  • Don't let rest, put into muffin tin 3/4 full.
  • Bake 20-22 minutes.

Steps:

  • Mix all ingredients in a mixing bowl. With a hand mixer beat about 2 -3 minutes until mixed well. Spoon batter into lined muffin pan. I got 16 muffins. Bake about 20-25 minutes depending on your oven. Do not over bake. They will be very moist. Notes: Adjust points according to how many many muffins you get 24 muffins will be 2 points each 16 will be 3 points These can be frozen in a Ziplock. Remove however many you want the night before (or earlier in the day) to thaw.

1 tablespoon minced fresh garlic
1 large red bell pepper, seeded and diced
1 large green bell pepper, seeded and diced
2 tablespoons chili powder
2 teaspoons cumin
1 (28 ounce) can crushed tomatoes
1 (15 ounce) can red kidney beans (rinsed and drained)
1 sweet onion, chopped
1/4 cup canned diced chilies or 1 fresh jalapeno pepper, seeded and finely chopped
2 tablespoons tomato paste
