WEIGHT WATCHERS TACO SOUP

Weight Watchers Taco Soup image

I have seen a couple of recipes for taco soup, but this is different. I received it from my ww leader. It is very much like a chili and is so easy. My family loves it and I love it topped with 1 tbsp low fat sour cream.

I believe this soup is only 1 point, but check to be sure. I have seen all kinds of variations of this recipe but none that are vegetarian. My whole family loves this one. We add a couple of Fritos to top, a small tab of sour cream and a sprinkle of cheese.

WW TACO SOUP (WEIGHT WATCHERS)

Ww Taco Soup (Weight Watchers) image

This is a slightly different version of Taco Soup for Weight Watchers. It has no meat so it is actually a vegetable soup. We served it for my mother in law and paired it with a salad and some rolls for the rest of the family. It was yummy. One caution it is spicy for some so if you don't like it spicy get the corn without the chilies. We used Lawry's taco seasoning and Hidden Valley Ranch ranch packet for the best flavor. We have no ties to them but love their products for this. It is warm and makes a lot of soup. We served 4 adults and two kids. Got this on a internet site awhile back. It is yummy but remember to JUDGE IT AS A WEIGHT WATCHER recipe because if you went hog wild with ingredients with more fat and calories it could be even better. Enjoy ChefDLH. (Serving size is 1 cup. 2 WW points per serving.)

Time 25m

Yield 9 cups, 4-5 serving(s)

Number Of Ingredients 9

1 large onion, diced
1 (14 1/2 ounce) can diced tomatoes
1 (14 1/2 ounce) can diced tomatoes and green chilies
1 (11 ounce) canned corn mixed with chopped peppers (red and green)
1 (15 1/2 ounce) can canned low-fat refried beans or 1 (15 1/2 ounce) can fat free refried black beans
3 1/2 cups water
1 (1 1/4 ounce) package taco seasoning
1 (1 ounce) package ranch dressing mix (dry)
fat free vegetable oil cooking spray

Steps:

  • Saute onion with vegetable oil cooking spray.
  • When softened, combine all other ingredients.
  • Cook until heated through.
  • Serve immediately.

Tips:

  • Use lean ground beef: To make your taco soup healthier, use lean ground beef or ground turkey instead of regular ground beef.
  • Add plenty of vegetables: Vegetables are packed with nutrients and fiber and help to bulk up your soup and make it more filling. Add a variety of vegetables, such as diced tomatoes, onions, bell peppers, and corn.
  • Use low-sodium broth: To reduce the sodium content of your soup, use low-sodium or unsalted broth. You can also add flavor to your soup with spices and herbs instead of salt.
  • Add a healthy fat: Adding a healthy fat, such as avocado or Greek yogurt, to your soup can help to make it more satisfying and filling. It can also help to improve the absorption of fat-soluble vitamins, such as vitamins A, D, and E.
  • Make it a complete meal: Serve your taco soup with a side of whole-wheat bread or cornbread, and a salad for a complete and satisfying meal.

Conclusion:

Taco soup is a delicious and versatile dish that can be tailored to your own preferences. With a few simple swaps, you can make taco soup that is healthy, filling, and satisfying. So next time you're looking for a quick and easy meal, give this Weight Watchers low-calorie taco soup a try!
