WHIPPED CREAM BISCUITS

I love homemade biscuits -and make some good ones from scratch. However, I have used this recipe on and off since I saw it on the side of a Bisquick box over 15 years ago. Only 2 ingredients make these easy and scrumptious biscuits. Everyone remarks how flaky and good they are -and can't believe it when I tell them how easy...

Time 15m

Number Of Ingredients 2

2 c bisquick baking mix
2/3 c whipping cream

Steps:

  • 1. Heat oven to 450 degrees.
  • 2. Mix baking mix and whipping cream until soft dough forms. Turn onto cloth-covered board well dusted with baking mix. Gently roll in baking mix to coat; shape into ball. Knead 10 times. Roll or pat 1/2 inch thick.
  • 3. CUT with 2-inch biscuit cutter dipped in baking mix. Place about 1 inch apart on ungreased cookie sheet. Bake until golden brown, approximately 10-12 minutes.
  • 4. Serve with butter and/or your favorite jelly, honey or other condiment.
  • 5. DO-AHEAD TIP: Before baking, biscuits can be cut with cutter, covered and refrigerated up to 4 hours.

Tips:

  • For the flakiest biscuits, use cold butter and buttermilk. Grate the butter or cut it into small pieces and keep it chilled until ready to use. Buttermilk can be made by adding 1 tablespoon of lemon juice or vinegar to 1 cup of milk and letting it sit for 5 minutes.
  • Don't overwork the dough. Overworking the dough will make the biscuits tough. Mix the dough just until it comes together, then stop.
  • Roll out the dough to an even thickness. This will help the biscuits cook evenly.
  • Cut the biscuits close together. This will help them rise evenly.
  • Bake the biscuits in a hot oven. This will help them rise quickly and evenly.
  • Brush the tops of the biscuits with melted butter as soon as they come out of the oven. This will help them stay moist.

Whipped cream biscuits are a delicious and easy-to-make breakfast or snack. They're perfect for any occasion, and they can be made with a variety of different ingredients.
