WHITE CHOCOLATE CHIP CRANBERRY OATMEAL COOKIES

White Chocolate Chip Cranberry Oatmeal Cookies image

I originally made these at the request of my old chorus director John Kelleher, who also worked at Seattle area Starbucks (I think he'd had the combo in a cookie there, once). I was surprised but very pleased they came out so tasty! These days, these are pretty much the only cookies which are requested and I make on a fairly regular basis.

Time 57m

Yield 5 dozen

Number Of Ingredients 12

1 cup butter or 1 cup margarine, softened
1 cup firm packed light brown sugar
1 cup sugar
2 large eggs
2 teaspoons vanilla extract
3 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon salt
1 1/2 cups uncooked oats
2 cups white chocolate chips
1 cup coarse chopped pecans

Steps:

  • In a mixing bowl beat the butter until creamy, using an electric mixer on medium speed.
  • Gradually add in the sugars, beat well to combine.
  • Add in the eggs, 1 at a time; beat just until the yellow disappears after each addition.
  • Add in the vanilla; stir to combine.
  • In another mixing bowl, mix together the flour and next 3 ingredients.
  • Gradually add to the butter mixture; beat until blended.
  • Stir in the oats, chocolate morsels, and pecans.
  • Drop by tablespoonfuls onto a greased baking sheet.
  • Bake in a 350° oven for 12 minutes.
  • Cool on baking sheet for 3 minutes.
  • Transfer cookies to a wire rack to finish cooling.

Tips:

  • Use high-quality white chocolate chips for the best flavor. You can also use a combination of white and semi-sweet chocolate chips.
  • Don't overbeat the cookie dough, as this will make the cookies tough. Mix just until the ingredients are combined.
  • Chill the cookie dough for at least 30 minutes before baking. This will help the cookies hold their shape and prevent them from spreading too much.
  • Bake the cookies until they are just set around the edges but still soft in the center. Overbaking will make the cookies dry and crumbly.
  • Let the cookies cool completely on a wire rack before serving. This will help them to firm up and develop their full flavor.

Conclusion:

These white chocolate chip oatmeal cookies are a delicious and easy-to-make treat that is perfect for any occasion. They are soft and chewy with a sweet and nutty flavor. The white chocolate chips add a touch of sweetness and creaminess that makes these cookies irresistible. Whether you are a fan of white chocolate or oatmeal cookies, you are sure to love this recipe.
