1 ½ cups fresh or frozen cranberries
2 ½ cups all-purpose flour
1 cup sugar
1 tablespoon baking powder
½ teaspoon salt
2 eggs
1 cup buttermilk
⅓ cup butter, melted
1 - 1 ½ teaspoon almond extract
⅔ cup chopped almonds, toasted if you like
¼ cup white baking pieces
3 tablespoons powdered sugar
1 tablespoon French vanilla liquid coffee creamer

Steps:

  • Rinse cranberries in cold water; drain. Grease bottom and 1/2 inch up the sides of one 9x5x3-inch loaf pan. Line bottom of pan with waxed paper; grease. Set aside.
  • In a large bowl, combine flour, sugar, baking powder and salt. Make a well in center of flour mixture; set aside.
  • In a medium bowl, combine eggs, buttermilk, melted butter and almond extract. Add egg mixture all at once to flour mixture. Stir just until moistened (batter should be lumpy). Fold in cranberries and the chopped almonds. Spoon batter into prepared pan, spreading evenly.
  • Bake in a 325° oven about 1 hour 15 minutes or until a wooden skewer inserted near center comes out clean. Cool in pan on a wire rack for 10 minutes. Remove from pan. Cool completely on wire rack. Wrap and store overnight before slicing.
  • Before serving, unwrap bread. Drizzle with White Chocolate Glaze and, if desired, sprinkle with additional toasted almonds. Makes 1 loaf (12 slices).
  • In a small, microwave-safe bowl, microwave white baking pieces on 50 percent power (medium) for 1-1/2 to 2 minutes or until melted and smooth, stirring once or twice. Stir in powdered sugar and French vanilla liquid coffee creamer. If necessary, stir in additional coffee creamer, 1 teaspoon at a time, until glaze reaches drizzling consistency. Makes 1/4 cup.

1 cup Powdered Sugar (- sifted)
4 oz White Chocolate (- melted)
3/4 cup Dried Cranberries

Steps:

  • Preheat oven to 375°F. Line a 8 x 8 inch square baking pan with heavy duty aluminum foil, leaving some overhang. Grease the aluminum foil.
  • In a medium sized bowl, whisk the flour, baking powder, salt, cinnamon, nutmeg and all-spice together.
  • Melt 3 oz of the white chocolate morsels, set aside to cool slightly.
  • In the bowl of an electric mixer, cream the butter and sugar together until light and fluffy - about 3 to 5 minutes.
  • Add egg and vanilla and continue to beat until well incorporated, light and fluffy - about 3 to 5 minutes.
  • Reduce the mixers speed to low and add the melted chocolate. Continue to beat until incorporated.
  • Gradually add in the flour mixture, 1/4 cup at a time.
  • Stir in almonds, ginger and remaining white chocolate morsels until evenly distributed.
  • Pour into prepared baking pan and spread evenly.

A perfect holiday cookie! You can substitute dried cherries for the cranberries, use a good quality white chocolate for this, I use Lindt or Baker's. These can be made up to 1 week ahead, or freeze in an air tight container. I highly suggest to double this recipe, these are wonderful biscotti!

2 1/2 cups flour
1 teaspoon baking powder
1/2 teaspoon salt
1 1/4 cups sugar (can use another 1/4 cup more for a sweeter taste)
1/2 cup butter, room temperature
2 large eggs
1 1/2 teaspoons almond extract
1 1/2 cups dried cranberries
1/2-3/4 cup almonds (chopped or sliced)
1 egg white
8 ounces white chocolate

Steps:

  • Set oven to 350 degrees.
  • Line a baking sheet with parchment paper.
  • In a bowl whisk together flour with baking powder and salt.
  • Using an electric mixer beat the butter, sugar and eggs with extract until well blended (about 4 minutes).
  • Add in the flour mixture, then the cranberries and almonds; mix well to combine.
  • Divide the dough in half.
  • With floured hands shape the dough in about 9 x 2-inch logs.
  • Transfer the logs to prepared baking sheet, spacing evenly.
  • In a small bowl whisk the egg white until foamy, the brush the egg white on top and sides of each log.
  • Bake the logs until golden brown, about 35 minutes (the logs will spread when baked).
  • Cool completely in the baking pan (leave the oven heat on to 350 degrees).
  • Transfer the logs to a work surface.
  • Shake out any crumbs from the parchment paper, then place back on the baking sheet with clean-side facing upwards.
  • Using a serrated knife, sliced the logs on diagonal about 1/2 - 3/4-inches.
  • Arrange the sliced biscotti cut side down on the same baking sheet.
  • Bake for 10 minutes; turn the biscotti over and bake for another 5 minutes, just until beginning to lightly brown.

  • Preheat the oven to 350 degrees F (175 degrees C). Generously grease a 9x13-inch baking pan.

I created this recipe from scratch and was inspired by a bar I had a Starbucks. The one at Starbucks is lighter, similar to cake or a light brownie, this one has a cookie base. I chop the cranberries roughly if they are the larger dried ones. Posting here so my sisters can access it. Enjoy! **When melting the chips, I put them in a plastic bag and microwave for 30 seconds, squish them a bit, and then microwave again for 10 or so more seconds until fully melted (but be very careful not to overcook). Then snip a tiny piece of the corner to pipe in a small stream.
