She says holiday eaters are usually excited to try new desserts but they still want to stick with the "Thanksgiving flavor profile." "Spice cupcakes are certainly within the scope of traditional Thanksgiving flavors," she says. "With the twist of the white chocolate cream cheese frosting, these have a decadent richness and tang that make for a perfect finish to everyone's favorite meal."

1 1/2 cups all purpose flour
1 teaspoon baking soda
1 teaspoon cinnamon
1/2 teaspoon freshly grated nutmeg
1/4 teaspoon ground cloves
1/8 teaspoon ginger
1/4 teaspoon salt
1/4 cup unsulfured molasses
1/2 cup milk
1 stick of butter
1/3 cup granulated sugar
2 eggs
4 ounces (1/2 stick) unsalted butter, still firm but not cold
8 ounces cold cream cheese
1/8 teaspoon salt
3/4 pound (3/4 box) plus 2 teaspoons powdered sugar, sifted
1/2 teaspoon pure vanilla extract
2 ounces white chocolate, melted

Steps:

  • Preheat oven to 350 degrees Fahrenheit. Line cupcake pan with 12 cupcake liners.
  • In a bowl, whisk together flour, baking soda, spices and salt. In another bowl, combine molasses and milk.
  • With an electric mixer fitted with flat beater, cream the butter on medium to medium-high speed for 3 to 5 minutes. Gradually add the sugar. and beat until light and fluffy in texture. Beat in the eggs, one at a time.
  • Reduce the mixer speed to low, and incorporate the flour mixture alternately with the molasses mixture, beating thoroughly after each addition and ending with dry ingredients.
  • Divide batter among the cupcake liners and bake for about 20 minutes, or until top of cupcakes spring back when lightly touched. Cool thoroughly before frosting.
  • Prepare the frosting. Using an electric mixer with flat beater, mix together butter, cream cheese and salt on medium speed for 3 to 5 minutes. Reduce speed to low, and gradually add powdered sugar until incorporated. Gradually add vanilla and melted white chocolate until just blended. Do not overwhip the frosting; the consistency should be creamy and dense, like ice cream.

I got this recipe out of a Woman's World magazine at work. It is very tasty but I had a problem with my cupcakes not rising. I'm posting it anyway in hopes that someone else will try it and maybe have better success than me. The white chocolate buttercream frosting is very rich but really yummy! You can melt the chips in the mircowave but I had better success using a double boiler.

2 cups white chocolate chips, seperated
1 1/2 cups butter, softened
18 ounces white cake mix
1 cup water
3 eggs
2 cups confectioners' sugar
24 strawberries (optional)
macadamia nuts (optional)

Steps:

  • Preheat oven to 350.
  • Line 24 muffins cups with cupcake papers.
  • Melt 1 cups of the white chocolate chips and let cool.
  • Melt 1/2 cup butter, let cool slightly.
  • On medium speed, mix cake mix, eggs, water, melted white chocolate chips, and 1/2 cup melted butter until combined 1 minute.
  • On medium-high beat 2-3 minutes until light and fluffy.
  • Divide batter between cupcke liners.
  • Bake 20-23 minutes ot until inserted toothpick comes out clean.
  • Cool 10 minutes.
  • Remove from pan and finish cooling on wire racks.
  • Cool completely.
  • White Chocolate Frosting.
  • Melt remaining 1 cup white chocolate chips.
  • On medium-high combine white chocolate chips and 1 cup butter until smooth.
  • Gradually beat in confectioners' sugar until light and fluffy.
  • Spread over cooled cupcakes.
  • Slice strawberries, leaving the cap end whole.
  • Fan strawberries out and top each cupcake with 1 strawberry, if desired.
  • You can also sprinkle each cupcake with chopped macadamia nuts, if desired.

Nonstick cooking spray, for spraying liners
1 2/3 cups cake flour
1 teaspoon baking powder
1/2 teaspoon baking soda
Pinch salt
4 ounces (1 stick) unsalted butter, at room temperature
1 1/4 cups sugar
3 very ripe medium bananas (about 1 cup mashed)
1 teaspoon vanilla extract
2 eggs
1/3 cup buttermilk
2/3 cup heavy cream
1/4 teaspoon anise
1/4 teaspoon ground cardamom
12 ounces white chocolate, finely chopped

Steps:

  • For the cupcake batter: Preheat the oven to 350 degrees F. Line cupcake pans with cupcake liners (for a total of 24 cupcakes); lightly spray the liners with cooking spray.
  • In a medium mixing bowl, sift together the cake flour, baking powder, baking soda and salt and set aside. In the bowl of a stand mixer with a paddle attachment, cream the butter and sugar. Add the bananas and beat until smooth. Mix the vanilla extract and eggs into the banana mixture, scrape down the sides of the bowl and beat until incorporated, about 1 minute. Add the dry ingredients and buttermilk to the banana mixture in three parts, alternating between the dry and wet ingredients.   • For the white chocolate ganache: In a microwave-safe bowl, microwave the heavy cream, anise and cardamom in 30-second intervals until hot but not boiling. Add the white chocolate and stir gently using a rubber spatula until the chocolate is melted and the mixture is smooth.

1/2 cup (1 stick) unsalted butter, at room temperature, plus more for buttering the pans
1 cup shortening
1 cup lightly packed dark brown sugar
1 cup granulated sugar
4 large eggs
1 1/2 cups buttermilk
1 teaspoon vanilla extract
2 cups all-purpose flour
1 tablespoon ground cinnamon
2 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon nutmeg
1/2 teaspoon allspice
1/2 cup (1 stick) unsalted butter, at room temperature
1 pound confectioners' sugar
3 tablespoons fig butter (see Cook's Note)
2 to 3 teaspoons buttermilk, optional, for thinning the frosting if needed
1 1/2 cups granulated sugar
3/4 cup buttermilk
1/2 cup (1 stick) unsalted butter
2 tablespoons corn syrup
1 teaspoon baking soda
1 teaspoon vanilla
24 ounces good-quality white chocolate, chopped or chips
1 cup heavy cream

Steps:

  • For the cinnamon spice cake: Preheat the oven to 350 degrees F. Line two 9-inch cake pans with parchment paper and lightly butter.
  • In the bowl of a stand mixer, beat the butter, shortening, brown sugar and granulated sugar together until smooth. Beat in the eggs 1 at a time until smooth and light. Stir together the buttermilk and vanilla in a separate small bowl. Sift together the flour, cinnamon, baking powder, baking soda, nutmeg and allspice in a large bowl. Alternately add the flour mixture and buttermilk mixture in thirds to the mixer bowl, blending well after each addition.
  • Pour the batter into the prepared pans and bake until a cake tester inserted in the center of the cakes comes out clean, about 35 minutes. Cool about 5 minutes, then turn out onto a cooling rack to cool completely, about 10 minutes.
  • For the fig buttercream: In a clean bowl of a stand mixer, cream the butter until smooth. Add the confectioners' sugar and beat until incorporated. Mix in the fig butter. Add the buttermilk if needed to thin to a spreading consistency.
  • For the buttermilk caramel: Combine the granulated sugar, buttermilk, butter, corn syrup and baking soda in a LARGE pot. Do not use a saucepan; it may boil over. Bring the ingredients to a boil and reduce the heat to low but still bubbling. Cook, stirring very frequently, until golden brown, 8 to 9 minutes. Remove from the heat and add the vanilla. Let cool.
  • For the white chocolate ganache: Put the white chocolate in a heatproof bowl. Heat the cream in a saucepan until just simmering. Pour the cream over the chocolate and let stand for 5 minutes. Stir until smooth and melted. Refrigerate until cooled completely, about 20 minutes. Transfer the ganache to a clean bowl of a stand mixer fitted with the whisk attachment and whip until smooth.
  • To assemble the cake: Slice each cake layer in half horizontally. Place a layer on a plate or cake stand and cover with fig buttercream. Repeat with 2 more layers and the buttercream. Put the final cake layer on top, then frost the top and sides with the white chocolate ganache. Pour the buttermilk caramel over the top of the cake to drizzle down. Serve with more caramel sauce if desired.
