Yield 6

Number Of Ingredients 7

4 lb whole chicken
2 oz green onion
1.5 oz ginger
5 tbsp corn oil
1 tsp salt
2 tsp salt
1 tbsp sesame oil

Steps:

  • Set the stove to high heat and start boiling a generous amount of water in the pot you'll be using.

  • We'll heat up our wok on high heat and add corn oil.
  • We'll add salt and sesame oil to the bowl, and mix for 30-60 seconds.
  • Grab a big bowl and dump a few handfuls of ice into it. Fill it roughly halfway with cold water.

STEWED CHICKEN

Provided by Food Network

Categories     main-dish

Time 50m

Number Of Ingredients 15

1 (4 pound) chicken cut into pieces
Salt and pepper, to taste
1 1/2 tablespoons dried thyme
2 cloves garlic, finely chopped or 1 tablespoon garlic powder
2 tablespoons oil
2 tablespoons flour, mixed with 2 tablespoons water
1 small yellow onion, chopped
1 pound dried red beans
1 tablespoon dried thyme
1/4 cup chopped yellow onion
2 cloves garlic, finely chopped
1 tablespoon black pepper
2 tablespoons salt
1 (6-ounce) can coconut milk
2 pounds white rice

Steps:

  • For the chicken: Season chicken with salt, pepper, thyme and garlic. Heat two tablespoons of oil in large frying pan over moderately high heat. Brown chicken, turning pieces once, about 4 minutes per side. Add a few teaspoons of water to skillet. Repeat a few times and then add watered flour to make a gravy. As chicken browns, add onions, cover pan and simmer on low heat for 10 to 15 minutes so chicken will stew. (Typically back home in Belize onion was the only vegetable used with the chicken, however many Belizians that are now in the Unites States add bell pepper and tomatoes to this dish.)
  • For the rice and beans: Clean beans and check for stones. Put beans in a stockpot with water to cover, thyme, onions, garlic and pepper. Do not add salt at this time because the beans will turn hard. Cover and cook over moderate heat for 1 hour, stirring every 10 minutes and adding a little water if necessary. Cook until beans have softened. Add salt, coconut milk and uncooked rice. Cover and barely simmer over low heat (milk may easily burn) for 10 to 15 minutes, stirring occasionally.

WHITE-CUT CHICKEN

Yield Makes 8 servings (as part of a Chinese meal)

Number Of Ingredients 18

For chicken
1 (3- to 3 1/2-lb) whole chicken (with head and feet if desired), neck (if without head) and giblets reserved for another use if desired
1 bunch scallions, halved crosswise
2 oz Smithfield or other cured ham (1 piece or sliced), trimmed of any spice coating
6 (1/4-inch-thick) round slices peeled fresh ginger
14 cups water
1 teaspoon salt
1 teaspoon Asian sesame oil
1/2 cup fresh cilantro leaves
For dipping sauce
1 bunch scallions (white and pale green parts only), cut into very thin 2-inch strips
3 tablespoons light soy sauce (preferably Pearl River Bridge brand)
3 tablespoons peanut or vegetable oil
1 tablespoon finely grated (with a rasp) peeled fresh ginger
well-seasoned 14-inch flat-bottomed wok
heavy cleaver
Special Equipment
a rasp grater; a well-seasoned 14-inch flat-bottomed wok; a heavy cleaver

Steps:

  • Make chicken:
  • Rinse chicken inside and out, then bend legs to tuck feet (if still attached) inside cavity. Stuff cavity with scallions, ham, and ginger.
  • Bring water with salt to a boil in a deep 7- to 8-quart stockpot or pasta pot. Add chicken, breast side down (chicken may not be completely covered with liquid), then reduce heat and simmer, covered, 20 minutes.
  • Remove from heat and let stand, covered, 30 minutes. Turn chicken over and let stand, covered, 15 minutes more (chicken will be cooked through).
  • While chicken stands, fill a large bowl three-fourths full with ice and cold water. Carefully remove chicken from pot with a large slotted spoon and plunge into ice water to stop cooking. Let stand, gently turning over once (be careful not to tear skin), until cool, about 10 minutes total. Carefully transfer to a cutting board and discard scallions, ham, and ginger from cavity. Pat dry. Rub skin with sesame oil.
  • Make dipping sauce:
  • Stir together scallions and soy sauce in a small heatproof bowl.
  • Heat wok over high heat until a drop of water vaporizes instantly. Pour oil around side of wok, then tilt wok to swirl oil, coating sides. When oil just begins to smoke, carefully add ginger (oil will spatter) and stir-fry 30 seconds. Immediately remove from heat and pour over scallion mixture, stirring to combine (scallions will wilt).
  • To cut and serve chicken on a platter (Chinese restaurant-style), cut off the head and neck (if attached) with a cleaver and put at one end of a large platter. (These parts, along with the back and feet, aren't always eaten.) Cut off the feet. Cut off the drumsticks and thighs, then cut crosswise through the boneinto 1-inch pieces. Place the feet and leg meat at the other end of the platter. Cut off the wings, separating them at the joints, and put on the sides of the platter. Cut through the ribs, separating breast from back, then cut the backbone crosswise into 3 pieces and put them in the center of the platter. (Striking the cleaver with a rubber mallet makes the cuts clean.) Cut the breast crosswise through the bone into 1-inch pieces and arrange on the back. Alternatively, cut chicken according to procedure and mound pieces in a bowl.
  • Drizzle 2 tablespoons dipping sauce over chicken and sprinkle with cilantro leaves. Serve warm or at room temperature, with remaining dipping sauce on the side.

Time 1h25m

Yield 8

Number Of Ingredients 15

3 tablespoons butter
2 pounds chicken thighs
8 slices bacon
2 stalks celery, chopped
3 carrots, chopped
1 red onion, finely chopped
3 cloves garlic, finely chopped
1 (14 ounce) can vegetable broth
½ teaspoon paprika
½ cup heavy cream
1 (26 ounce) can condensed cream of chicken soup
1 cup water
1 (8.75 ounce) can sweet corn, drained
ground black pepper to taste
1 (10 ounce) can buttermilk biscuits

Steps:

  • In a large skillet over medium-high heat, melt the butter and cook the chicken thighs until the meat is just cooked through. Remove the chicken pieces from the skillet and allow to cool. Using forks, pull meat from the bones and cut into small pieces or shred. Set aside.
  • Meanwhile, in a medium skillet, cook the bacon over medium heat until nicely browned and crispy. Remove strips from bacon grease and drain on a paper towel. Crumble the drained and cooled bacon and set aside. Reserve 1 tablespoon of the bacon drippings.
  • Scrape the chicken drippings from the large skillet into a large stock pot or Dutch oven. Cook the celery, carrots, red onion, and garlic over medium heat until the red onions are soft and transparent. Add the vegetable broth, chicken, and 1 tablespoon reserved bacon grease. Simmer over medium heat for 12 minutes, then stir in paprika, heavy cream, cream of chicken soup, and water. Heat through, stirring regularly, about 5 minutes. Stir in the sweet corn and ground pepper.
  • Tear each buttermilk biscuit into quarters and drop into the chicken stew. Reduce heat to medium-low; stir occasionally until dough is cooked though, forming dumplings at the top of the stew, about 10 minutes. Remove from heat and serve with a garnish of crumbled bacon.

Tips:

  • Choose the Right Chicken: Opt for a free-range or organic chicken for better flavor and texture.
  • Clean and Prep the Chicken: Remove any excess fat and giblets from the chicken. Rinse it thoroughly inside and out.
  • Blanch the Chicken: This step helps remove impurities and gives the chicken a cleaner flavor. Bring a large pot of water to a boil, add the chicken, and let it boil for a few minutes. Remove the chicken and rinse it under cold water.
  • Use a Large Pot: Make sure you have a pot large enough to accommodate the chicken and the cooking liquid.
  • Cover the Pot: Keep the pot covered during the cooking process to maintain a consistent temperature and prevent water evaporation.
  • Use Aromatic Ingredients: Add aromatics like ginger, scallions, star anise, and bay leaves to the cooking liquid to enhance the flavor of the chicken.
  • Simmer, Don't Boil: Maintain a gentle simmer throughout the cooking process to prevent the chicken from becoming tough.
  • Check the Doneness: Use a meat thermometer to ensure that the chicken is cooked through. The internal temperature should reach 165°F (74°C).
  • Let the Chicken Cool: Allow the chicken to cool slightly before serving to make it easier to handle.

Conclusion:

White Cut Chicken is a simple yet flavorful dish that showcases the natural taste of the chicken. By following these tips and using high-quality ingredients, you can create a delicious and authentic version of this classic recipe at home. Enjoy the tender and juicy chicken with a variety of dipping sauces and accompaniments for a satisfying meal.
