  • Let rise 6 – 7 hours, punch down and make into buns.
  • Let rise overnight and bake in the morning.

Tips:

  • Activate the yeast properly: Ensure the water is warm enough (around 110°F to 115°F) to activate the yeast. Proof the yeast in warm water with a pinch of sugar before adding it to the dough to ensure it's active and bubbly.
  • Use the right flour: All-purpose flour is typically used in this recipe, but you can also use bread flour for a chewier bun. If using bread flour, reduce the amount of water by 2 tablespoons.
  • Knead the dough properly: Kneading the dough develops the gluten, which gives the buns their structure. Knead the dough for at least 5 minutes, or until it is smooth and elastic.
  • Let the dough rise in a warm place: Find a warm spot in your kitchen, such as near a sunny window or on top of the refrigerator. Cover the dough with plastic wrap and let it rise for 1-2 hours, or until it has doubled in size.
  • Shape the buns properly: Divide the dough into 12 equal pieces and shape them into balls. Place the buns on a greased baking sheet, cover them with plastic wrap, and let them rise for another 30 minutes.
  • Bake the buns at the right temperature: Preheat your oven to 375°F and bake the buns for 20-25 minutes, or until they are golden brown.
