This is one of my favorite recipes to make on Christmas morning, it's festive and so very tasty! The recipe is inspired by the classic holiday movie "How the Grinch Stole Christmas."

1 tablespoon vegetable oil
1 tablespoon butter
1 cup chopped onion
½ cup chopped green bell pepper
½ cup chopped red bell pepper
8 cups frozen hash brown potatoes, thawed
4 ounces corned beef, diced
1 teaspoon garlic powder
½ teaspoon salt
½ teaspoon ground black pepper

Steps:

  • Heat oil and butter in a large nonstick skillet over medium heat. Add onion; cook for 5 minutes. Stir in bell peppers and garlic; cook for 3 minutes.
