One 5- to 8-pound beef brisket, trimmed of all fat (the butcher can do this for you!)
One 24-ounce bottle ketchup or chilli sauce
1 package dry onion soup mix
Several dashes hot sauce

Steps:

  • Preheat the oven to 275 degrees F.
  • Place the brisket in an oven-safe pan. Combine the ketchup and soup mix in a bowl, and then stir it around to mix. Pour in 1 cup water and stir to combine. (You can add more water if needed!)
  • Pour the sauce all over the brisket, and then flip the brisket over to coat the other side. Now just cover the pan with foil and roast in the oven for 6 to 7 hours.
  • Remove the pan from the oven and test the brisket to make sure it's fork-tender. The brisket should fall apart if you look at it! Slice the brisket into thin strips, then return the beef to the sauce and keep it warm until you're ready to serve.

1/4 cup minced garlic (about 12 cloves)
2 tablespoons finely chopped fresh rosemary
2 tablespoons freshly ground black pepper, more to taste
1 tablespoon kosher salt, more to taste
2 teaspoons light or dark brown sugar
1 tablespoon crushed red pepper
1 tablespoon smoked or hot paprika
1 8-to-9-pound whole brisket, trimmed (see note)
1/4 cup extra virgin olive oil
3 cups chopped yellow onions (about 2 large onions)
1 35-ounce can plus 1 28-ounce can (about 7 cups) peeled tomatoes and liquid
1 1/4 cups fruity white wine

Steps:

  • Preheat oven to 450 degrees. In a bowl, combine garlic, rosemary, pepper, salt, brown sugar, red pepper and paprika. Place brisket fat-side up in a large, deep roasting pan (about 13 by 16 inches) and rub all over with mixture.
  • Roast brisket, uncovered, for 20 minutes. While brisket cooks, pour olive oil into a large saucepan over medium heat and add onions. Sauté, stirring occasionally, until onion softens, about 5 minutes. Add tomatoes and their liquid, bring to a boil, then reduce to a simmer. Stir occasionally, breaking tomatoes with a spoon or whisk. Simmer uncovered for 10 minutes and season to taste with salt and black pepper. Remove brisket from oven. Reduce oven temperature to 325.
  • Pour 1 cup wine and the tomato sauce over brisket. Cover pan as tightly as possible with foil and roast for 3 1/2 hours, turning once at 2 hours and again at 3 hours, each time carefully replacing foil.
  • Transfer brisket to a platter. Allow sauce to settle for a moment in pan, then, using a slotted spoon, transfer to a blender, allowing fat to strain out. Purée until smooth, adding remaining 1/4 cup wine. Season to taste with salt and black pepper. Slice brisket diagonally from thinnest end in 1/4-inch slices. Serve with sauce.

3 cloves garlic, smashed

1 tablespoon tomato paste
1 1/2 teaspoons smoked paprika
1 teaspoon crushed red pepper
1/8 teaspoon ground allspice
Pinch ground cloves
1 cup ketchup
1/4 cup apple cider vinegar
2 tablespoons molasses
2 tablespoons dark brown sugar
1 1/2 teaspoons kosher salt
1 1/2 teaspoons soy sauce
1 1/2 teaspoons Worcestershire sauce
1 teaspoon English-style dry mustard powder

Steps:

  • Stir together the brown sugar, salt, black pepper, chili powder, smoked paprika, cumin, granulated garlic, onion powder and cayenne pepper in a small bowl. Combine the apple cider and 1 cup water in a food-safe spray bottle. Set both aside.
  • Trim the excess fat and silver skin from the brisket, leaving a 1/4-inch layer of fat on the top side of the brisket (the side with the fat cap). As you trim, make sure to remove any hard pieces of fat found throughout the meat since it will not render off during the cooking process. Transfer the brisket to a rimmed baking sheet; sprinkle it evenly all over with the spice rub then use your hands to rub the spices into the meat. Let sit at room temperature for 1 hour to let the seasoning penetrate.
  • Preheat a pellet grill to 225 degrees F (see Cook's Note).
  • Place the brisket, fat-side-up, directly on the grill grates. Insert a temperature probe if you have one, otherwise you will need an instant-read thermometer to check the temperature regularly. Close the lid and cook for 2 hours. At that point, mist the brisket with the apple cider mixture. Close the lid and cook, misting with the apple cider mixture every hour, until the internal temperature reaches 165 degrees F, about 6 hours more. Transfer the brisket to a rimmed baking sheet or cutting board then wrap the meat completely in aluminum foil.
  • Return the wrapped brisket to the grill and re-insert the temperature probe. Close the lid and continue to cook until the internal temperature reaches 203 degrees F, about 3 hours.
  • Remove the brisket from the grill and let rest, wrapped, for 30 minutes. Unwrap the brisket and transfer to a cutting board. Slowly separate the point cut (the thick fatty part) from the flat cut (the thinner, leaner part) by running a sharp knife through the fat that separates the two muscles. The flat cut can be sliced thinly and served immediately.
  • For the burnt ends, increase the pellet grill temperature to 275 degrees F and dice the point cut into 1/2-inch cubes. Transfer to a disposable aluminum tray or rimmed baking sheet lined with foil. Toss with the BBQ sauce and return to the pellet grill. Close the lid and cook, tossing occasionally, until the meat is caramelized all over and dark around the edges, 1 1/2 to 2 hours.
  • Heat the oil in a medium saucepan over medium heat. Stir in the garlic, chili powder, tomato paste, paprika, crushed red pepper, allspice and cloves; cook, stirring, until the paste is dark brick red, about 3 minutes. Add the ketchup, vinegar, molasses, brown sugar, salt, soy sauce, Worcestershire, mustard, black pepper, bay leaf and 1 cup water. Adjust the heat to maintain a gentle simmer and cook until the flavors come together, about 30 minutes. Remove and discard the garlic cloves and bay leaf; let the sauce cool to room temperature. The sauce can be refrigerated in an airtight container for up to 1 week.

  • Turn the broiler on high.
  • Set the brisket in a large roasting pan. Season generously on all sides with 1½-2 tablespoons of salt and ground black pepper to taste.
  • Turn the brisket fat-side up and broil for 12-15 minutes, depending on the thickness of the fat cap, until there is no white fat remaining. Flip and broil for another 5-6 minutes on the second side, until browned.

  • If the roasting pan fits on the stovetop, remove the brisket from the pan and set aside. Place the roasting pan on the stovetop and add the olive oil to the rendered beef fat in the pan. Heat over medium-high heat until shimmering. (Alternatively, remove the brisket from the roasting pan and pour any rendered beef fat into a large pot. Add the olive oil and heat over medium-high heat until shimmering.) Add the onions and carrots and season with the remaining teaspoon of salt. Cook, stirring occasionally, until the onions are soft and translucent, 6-8 minutes. Deglaze the pan with the red wine, scraping up any browned bits from the bottom.
  • If using the roasting pan, spread the vegetables in an even layer and place the brisket, fat-side up, on top. (If using a separate pot, transfer the vegetables back to the roasting pan, spread in an even layer, and place the brisket on top.) Pour the beef stock mixture over the brisket and nestle the bouquet garni into the vegetables. Cover the pan with heavy-duty aluminum foil.
  • Transfer the roasting pan to the oven and bake for 5-6 hours, until a fork can be easily inserted into the thickest part of the brisket.
  • Remove the roasting pan from the oven and let cool for about 1 hour at room temperature, then transfer to the refrigerator to chill overnight. Resting overnight is optional, but recommended. (The brisket should rest, covered, for a minimum of 1 hour before slicing; however, the meat will be very tender and fall apart easily).
  • The following day, preheat the oven to 200˚F (95°C). Set a wire rack over a baking sheet.
  • Remove the brisket from the braising liquid and transfer to the wire rack. Cover with aluminum foil. Transfer the brisket to the oven and bake for about 1 hour, until warmed through.
  • While the brisket is warming, make the sauce. Remove the bouquet garni from the braising liquid and scoop the solidified fat from the surface (it's okay if you don't get it all; you will skim the sauce as it simmers). Strain the vegetables from the braising liquid and set aside.
  • Transfer 3 cups of the braising liquid to a large, high-walled skillet. Bring to a boil over medium-high heat, then reduce the heat to low and simmer for 35-40 minutes, stirring occasionally, and skimming the fat that rises to the surface, until reduced by about half. Transfer to a gravy boat or medium bowl.
  • When ready to serve, thinly slice the brisket against the grain. Serve with the vegetables and reduced braising liquid.
