Tips:

  • Selecting the Best Cauliflower: Opt for a medium-sized cauliflower with compact florets and a firm, white head. Avoid those with blemishes or signs of wilting.
  • Cleaning and Prepping the Cauliflower: Remove the outer leaves and trim the stem. Rinse the cauliflower under cold water and pat it dry with a clean kitchen towel. Cut off any large florets to create a more uniform shape for roasting.
  • Seasoning and Roasting: Generously rub the cauliflower with olive oil, salt, and pepper. You can also add additional seasonings like garlic powder, smoked paprika, or cumin to your taste. Roast the cauliflower in a preheated oven at 425°F (220°C) for 30-35 minutes or until tender and slightly browned.
  • Making the Whipped Goat Cheese: Combine goat cheese, plain yogurt, lemon juice, fresh herbs (such as chives, parsley, or dill), and a pinch of salt and pepper in a food processor or blender. Process until smooth and creamy. You can adjust the consistency by adding more yogurt if desired.
  • Serving and Enjoying: Transfer the roasted cauliflower to a serving platter and top with dollops of whipped goat cheese. Garnish with additional fresh herbs and a drizzle of olive oil. Serve immediately while the cauliflower is still warm and tender.

Conclusion:

Whole roasted cauliflower with whipped goat cheese is a delicious and versatile dish that can be enjoyed as a main course, side dish, or even as an appetizer.
