This is the best savory vegetarian pie I have ever made! Found it online a couple of months ago. I'm watching what I'm eating, and the whole-wheat crust got me interested...Add some fresh chives to the recipe for even more flavor!

Time 1h30m

Yield 6 serving(s)

Number Of Ingredients 19

3/4 cup whole wheat pastry flour
3/4 cup all-purpose flour
1 1/2 teaspoons baking powder
1/4 teaspoon salt
1/2 cup fat-free cottage cheese
1/4 cup canola oil
1/4 cup skim milk
1 1/2 teaspoons sugar
1 egg, mixed with
1 tablespoon water, for glaze
1 tablespoon extra virgin olive oil
2 cups leeks, finely sliced (about 2 large)
12 ounces mushrooms, sliced (mix of cremini and potrabello)
1 large egg
1/3 cup nonfat sour cream
1/2 teaspoon salt (to taste)
fresh ground pepper
1/2 cup scallion, chopped
1/4 cup parsley, chopped

Steps:

  • To prepare crust: Whisk whole-wheat flour, all-purpose flour, baking powder and salt in a medium bowl. Puree cottage cheese in a food processor. Add oil, milk and sugar; process until smooth. Add the dry ingredients and pulse 4 to 5 times, just until the dough clumps together. Turn out onto a lightly floured surface and knead several times, but do not overwork. Press the dough into a disk, dust with flour and wrap in plastic wrap. Refrigerate for at least 20 minutes.
  • Meanwhile, prepare filling: Heat oil in a large nonstick skillet over medium-low heat. Add leeks and cook, stirring often, until tender, 3 to 5 minutes. (Add water, if necessary, to prevent scorching.) Add mushrooms and increase heat to medium-high; cook, stirring occasionally, until the mushrooms are tender and the liquid has evaporated, 3 to 4 minutes. Let cool.
  • Whisk egg, sour cream, salt and pepper in a large bowl. Add scallions, parsley and the mushroom mixture; toss to coat.
  • To assemble & bake galette: Preheat oven to 400°F Coat a baking sheet with cooking spray.
  • On a lightly floured surface, roll dough into a rough 15-inch circle about 1/4 inch thick. Roll it back over the rolling pin and transfer to the prepared baking sheet. Spread the filling over the dough, leaving a 2-inch border all around. Fold the border up and over the filling to form a rim, pleating as necessary. Brush egg glaze over the rim.
  • Bake the galette until the crust is golden, 25 to 35 minutes. Let cool on the baking sheet on a wire rack for 5 minutes. Slide onto a serving platter and serve hot or at room temperature.

Yield Makes 4 servings

Number Of Ingredients 9

1 3/4-ounce package dried chanterelle mushrooms
4 tablespoons (1/2 stick) butter
1/2 cup minced leek (white and pale green parts only)
1 large shallot, chopped
6 ounces portobello mushrooms, stems and gills removed, caps finely chopped
1/2 cup dry white wine
6 tablespoons fresh soft goat cheese (such as Montrachet)
3 tablespoons minced fresh parsley
1 sheet frozen puff pastry (half of 17.3-ounce package), thawed

Steps:

  • Place dried chanterelles in small bowl. Pour enough hot water over to cover chanterelles; let stand until softened, about 30 minutes. Drain. Finely chop.
  • Melt 2 tablespoons butter in large nonstick skillet over medium-high heat. Add leek and shallot; sauté 2 minutes. Add 2 tablespoons butter, then portobellos and chanterelles; sauté until tender, about 5 minutes. Add wine; simmer until liquid is reduced by half, about 2 minutes. Add 2 tablespoons goat cheese; stir until slightly thickened, about 1 minute. Season with salt and pepper. Stir in 2 tablespoons parsley. Remove from heat.
  • Position rack in center of oven; preheat to 375°F. Line baking sheet with parchment paper. Roll out puff pastry sheet on floured surface to 12x12-inch square. Using 4-inch-diameter biscuit cutter or bowl as guide, cut out 4 pastry rounds. Using small cookie cutters, such as those with leaf shape, cut out decorative designs from remaining pastry, if desired. Place rounds on baking sheet, spacing apart. Spread 1 tablespoon goat cheese atop each. Spread mushroom mixture evenly atop each to within 1/2 inch of edge, dividing equally. Turn pastry edges upward slightly to hold topping in place. Place decorative pastry cutouts on baking sheet around galettes.
  • Bake until pastry is puffed and golden, about 15 minutes for decorative cutouts and 30 minutes for galettes.
  • Sprinkle galettes with 1 tablespoon parsley. Top with cutouts, if desired.

Time 2h30m

Yield 12 serving(s)

Number Of Ingredients 17

1 3/4 cups all-purpose flour
2 teaspoons sugar
3/4 teaspoon kosher salt
3/4 cup unsalted butter, cut into pieces and chilled
2 tablespoons chilled vodka (optional)
1 tablespoon apple cider vinegar
1 1/2 lbs mushrooms (such as shitake, beech, maitake, chanterelle, and or or oyster)
1/4 cup extra virgin olive oil
3 garlic cloves, finely grated, divided
kosher salt, freshly ground black pepper
8 ounces whole milk ricotta cheese
1/4 cup grated parmesan cheese
1 tablespoon chopped fresh thyme leave
8 ounces grated whole milk mozzarella
2 fresno bell peppers, thinly sliced
6 scallions, root ends trimmed
5 fresh thyme sprigs

Steps:

  • Pastry:.
  • Pulse flour, sugar, and salt in food processor to combine. Add butter and process until largest pieces of butter are pea-size. Transfer to a large bowl.
  • Combine vodka, vinegar and 2 Tbsp. ice water (or 1/4 cup ice water if not using vodka) in a small bowl and drizzle over flour mixture, mixing with a fork to combine. Mix until shaggy pieces form, then knead in bowl a couple of times with your hands to bring together (dough will look very clumpy, dry, with loose bits). Transfer large clumps of dough to work surface, drizzle 2 teaspoons ice water over remaining flour mixture in bowl and knead again to bring it together. Place on top of dough on work surface. Press into a single mass, incorporating dry bits, then pat down to make a 3/4"-thick square. Using a bench scraper or knife, divide dough into 4 pieces. Stack pieces on top of one another, placing any unincorporated dry bits in between layers, and press down to combine. Form dough into a 3/4"-thick square and repeat process 3 more times. Flatten into 3/4" rectangle and wrap tightly in plastic. Chill at least 2 hours.
  • Place a rack in the lowest part of the oven; preheat to 375°. Let dough sit at room temperature 5 minutes to soften. Roll out dough on a lightly floured surface to ⅛" thick and about 18 x 13". It's ok if the edges are shaggy and it's not quite rectangular! Place on a parchment-lined rimmed baking sheet and chill while you prepare the toppings.
  • Toppings and Assembly:.
  • Toss mushrooms, oil, half of garlic, 1 1/2 teaspoons salt and pinch of pepper in a large bowl until completely coated. Stir ricotta, parmesan, chopped thyme leaves, 3/4 teaspoons kosher salt, 1/2 teaspoons pepper and remaining garlic in a small bowl until combined.
  • Sprinkle mozzarella evenly over top of cold pastry. Dollop ricotta evenly over top. Arrange scallions next and spread green ends out so they fan and overlap across the galette. Top with mushrooms, fresnos and thyme sprigs. Bake on lowest rack until the crust is golden brown and the cheese is brown in spots. 50-65 minutes. Let cool 30 minutes and remove thyme sprigs before serving.
  • Do Ahead: Dough can be made 5 days ahead. Keep chilled, or freeze up to 1 month.

Time 2h15m

Number Of Ingredients 11

1 stick unsalted butter, divided, plus more for dish and top
1 onion, finely chopped
1 leek (white and pale-green parts only), halved lengthwise, thinly sliced crosswise, washed well, and thoroughly drained
Coarse salt and freshly ground pepper
3 tablespoons fresh thyme leaves
1 1/2 pounds mixed wild and cultivated mushrooms, cleaned, trimmed, and thinly sliced
1/2 cup dry white wine
2 1/2 cups chicken broth
12 cups day-old chewy, rustic bread (from a 1 1/2-pound loaf), crust removed
3/4 cup filberts (hazelnuts), toasted and very coarsely chopped
3 large eggs, lightly beaten

Steps:

  • Preheat oven to 375 degrees. Brush a 2 1/2-quart baking dish with butter.
  • Melt 2 tablespoons butter in a large saute pan over medium heat. Add onion, leek, and 1/2 teaspoon salt, and cook, stirring occasionally, until softened, 7 to 8 minutes. Stir in thyme, and transfer to a plate.

  • Transfer dressing to baking dish. Cover, and bake 30 minutes. Uncover dish, dot with remaining 2 tablespoons butter, and bake until top is golden brown and crisp, 30 to 35 minutes. Let cool 30 minutes before serving.

WILD MUSHROOM AND LEEK BEGGAR'S PURSES

Wild Mushroom and Leek Beggar's Purses image

Any combination of wild mushrooms can be used; try chanterelles and shiitakes.

Provided by Martha Stewart

Number Of Ingredients 8

4 leeks, washed thoroughly
4 tablespoons olive oil
1 1/2 pounds wild mushrooms, cleaned and sliced or left whole, depending on size
1-2 tablespoons fresh thyme leaves
Salt and freshly ground pepper
1/4 cup Madeira or veal or beef stock
6 sheets frozen phyllo dough, thawed in refrigerator
6-8 tablespoons unsalted butter, melted

Steps:

  • Split leeks in half lengthwise, leaving root attached. Remove some of the inner layers to use for tying purses; blanch them for 30 seconds in boiling water, refresh in cool water, drain, and set aside.
  • Remove green tops and thinly slice leeks. Saute in 1 tablespoon of the oil until soft, about 5 minutes. Do not brown. Remove from pan to a large bowl.
  • Add another tablespoon of oil to pan, turn heat to medium high, and add enough mushrooms to cover bottom of pan. Cook, stirring frequently, until just softened, about 3 minutes. Remove from pan and add to leeks. Repeat until all mushrooms are cooked. If using a variety of mushrooms, cook each type separately.
  • Return mushrooms and leeks to pan. Add thyme, salt, pepper, and Madeira or stock, and cook over high heat, stirring, until liquid is reduced to a syrupy consistency. Set aside to cool.
  • Unwrap phyllo pastry and unroll flat. Cover completely with damp dish towel to prevent drying out. Lay out a sheet of phyllo and brush it sparingly with melted butter. Repeat until you have three layers. Cut into 4 rectangles. Place 1/3 cup filling in the center of each and gather into a cinched-purse shape. Repeat with remaining filling. (Wrap and refreeze remaining phyllo dough.) Chill purses until firm.
  • Heat oven to 400 degrees. Place purses on a baking sheet and bake until evenly golden brown, about 15 minutes. Tie each purse with a leek ribbon and serve hot.

Tips:

  • When choosing wild mushrooms, make sure they are fresh and have a firm texture. Avoid any mushrooms that are slimy or have an unpleasant odor.
  • If you are unfamiliar with a particular type of wild mushroom, it is best to consult with an expert before eating it.
  • When cleaning wild mushrooms, use a soft brush to remove any dirt or debris. Do not wash them with water, as this can make them soggy.
  • Leeks can be quite sandy, so be sure to clean them thoroughly before using them. Cut off the root end and the dark green leaves, then slice the leek in half lengthwise and rinse it under cold water to remove any grit.
  • Galettes are a versatile dish that can be served for breakfast, lunch, or dinner. They can also be made ahead of time and reheated later.

Conclusion:

Using simple ingredients and just a few steps, you can create a delicious wild mushroom and leek galette that is sure to impress your family and friends. With its flaky crust, savory filling, and cheesy topping, this dish is a perfect way to enjoy the flavors of the season.
