- Meanwhile, bring 2 3/4 cups water to boil in heavy medium saucepan. Add rice; return to boil. Reduce heat to medium-low, cover and simmer until rice is tender and water is absorbed, about 15 minutes. Uncover; let stand until cool.
- Sprinkle chicken with salt and pepper. Heat large nonstick skillet over high heat. Add chicken with marinade to skillet and sauté until golden brown and cooked through, about 4 minutes. Cool.
- Whisk lime juice, 1 tablespoon soy sauce, 2 tablespoons oil, 2 tablespoons garlic and 3 teaspoons ginger in large bowl. Mix in rice, chicken, pineapple, kiwi, 1/2 cup green onions and bell pepper. Season with salt and pepper. (Can be made 6 hours ahead. Chill. Let stand up to 2 hours at room temperature before continuing.
- Line bowl with lettuce leaves. Spoon salad into bowl. Sprinkle with remaining 1/4 cup green onions and serve.
Tips:
- Choose the right rice: For this salad, wild rice is the best choice because it has a nutty flavor and a chewy texture that holds up well in a salad. If you can't find wild rice, you can substitute brown rice or quinoa.
- Cook the rice correctly: Be sure to follow the package directions for cooking the rice. If you overcook it, it will become mushy and won't be as good in the salad.
- Use fresh pineapple: Fresh pineapple is the best choice for this salad because it has a sweeter and more flavorful taste than canned pineapple. If you can't find fresh pineapple, you can use canned pineapple that has been packed in its own juice, but be sure to drain it well before adding it to the salad.
- Add some crunch: To give the salad some crunch, add some chopped celery, carrots, or almonds. You can also add some crumbled bacon or cooked chicken for a protein boost.
- Dress the salad lightly: A simple vinaigrette is the best dressing for this salad. Be sure to use a light hand with the dressing, so that the flavors of the rice, pineapple, and other ingredients can shine through.
Conclusion:
Wild rice and pineapple salad is a refreshing and flavorful salad that is perfect for a summer picnic or potluck. It is made with cooked wild rice, fresh pineapple, celery, carrots, and a light vinaigrette dressing. The salad is easy to make and can be tailored to your own taste preferences. For example, you can add some chopped bacon or cooked chicken for a protein boost, or you can use a different type of dressing, such as a honey mustard dressing or a balsamic vinaigrette.
