1/2 cup apple cider vinegar
3 tablespoons brown sugar
3 tablespoons cilantro (chopped, plus more for garnish)
2 tablespoons parsley (chopped)
1 cup vegetable oil
3 3/4 cups water
1/2 cup wild rice
1 cup white rice (rinsed)
1 medium red onion (diced)
1/2 whole pineapple (peeled, cored, and diced medium (I used a 20 ounce can of pineapple slices, drained, and diced))
kosher salt
freshly ground black pepper

Steps:

  • Whisk together the vinegar, brown sugar, cilantro, and parsley.
  • While still whisking, slowly add the oil.
  • Set aside while making the salad.
  • Add water to a large pot with a lid. Bring to a boil.
  • Add the wild rice, stir, cover and let simmer for 15 minutes.
  • Add the rinsed white rice, cover, and simmer another 20 minutes.
  • Remove from heat and let sit for 5 minutes.

⅔ cup uncooked wild rice
2 skinless, boneless chicken breast half
1 tablespoon butter
1 tablespoon olive oil
¼ cup sliced water chestnuts, drained
4 tablespoons walnut oil
2 tablespoons balsamic vinegar

1 head romaine lettuce, rinsed and dried

Steps:

  • In a medium saucepan, cover wild rice with three inches (7.5 cm) of salted water. Bring to a boil and boil, uncovered, for 30 minutes, or until tender. Drain the excess water, turn heat to lowest setting, cover rice and let steam for 15-20 minutes, or until the grains split open. Remove from heat and let cool.
  • In a medium skillet over medium heat, saute the chicken lightly in the butter and oil, cooking gently and thoroughly. Do not overcook the chicken. Cool and shred the chicken into bite-size pieces.

1 cup long-grain wild rice (6 ounces)
Kosher salt
2 navel oranges
2 tablespoons good olive oil
2 tablespoons freshly squeezed orange juice
2 tablespoons raspberry vinegar
1/2 cup seedless green grapes, cut in half
1/2 cup pecans, toasted
1/4 cup dried cranberries
2 tablespoons scallions, white and green parts, chopped
1/2 teaspoon freshly ground black pepper

Steps:

  • Place the wild rice in a medium pot with 4 cups of water and 2 teaspoons of salt and bring to a boil. Simmer uncovered for 50 to 60 minutes, until the rice is very tender. Drain well and place the rice back in the pot. Cover and allow to steam for 10 minutes. While the rice is still warm, place it in a mixing bowl. Peel the oranges with a sharp knife, removing all the white pith. Cut between the membranes and add the orange sections to the bowl with the rice. Add the olive oil, orange juice, raspberry vinegar, grapes, pecans, cranberries, scallions, 1/2 teaspoon of salt, and the pepper. Allow to sit for 30 minutes for the flavors to blend. 1 (16 ounce) can mandarin oranges, drained and dried with a paper towel
1 (16 ounce) pineapple tidbits, drained and dried with a paper towel
3 ounces maraschino cherries, drained and patted dry
1 cup green grapes or 1 cup red grapes, cut in half
1 cup fresh strawberries, sliced
1 (3 ounce) box orange Jell-O
13 ounces Cool Whip

  • Boil rice in 4 cups of water for 45 minutes.

1 teaspoon plus 2 tablespoons vegetable oil
4 teaspoons minced garlic
4 teaspoons minced peeled fresh ginger
12 ounces skinless boneless chicken breast halves or chicken tenders, cut crosswise into 1/2-inch strips
2 3/4 cups water
1 1/2 cups basmati rice or long-grain white rice
6 tablespoons fresh lime juice
1 cup cubed peeled pineapple
1 kiwi, peeled, cubed
3/4 cup thinly sliced green onions
1/2 cup chopped red bell pepper
4 large curly lettuce leaves

  • Mix 2 teaspoons soy sauce, 1 teaspoon oil, 2 teaspoons garlic and 1 teaspoon ginger in medium bowl. Add chicken and toss to coat. Let stand 30 minutes.
